Cheesecake Factory has a menu that’s beyond expansive, but one thing that’s always been incredibly popular are their avocado eggrolls (and yes, they spell it as one word instead of two). Instead of heading out, though, now I stay in and make them at home with my air fryer avocado egg rolls recipe!

  • 3 medium to large avocados, peeled, pitted, and diced (use 4 if they are small)
  • 2 Tbsp minced red onion
  • 1 Tbsp finely minced fresh cilantro
  • 6 sun dried tomato halves (packed in oil) roughly chopped
  • ½ tsp salt
  • ½ tsp lemon (or lime) juice
  • 8 egg roll wrappers
  • Olive oil spray (or similar)

For the Cashew Tamarind Sauce

  • ¼ cup cashews (roasted and salted)
  • ⅛ cup fresh cilantro leaves
  • 1 Tbsp tamarind powder
  • ¼ cup sweet chili sauce (the Thai style, not the tomato based version)
  • ½ tsp yellow curry powder
  • ½ tsp salt (or to taste)

Cook’s Note: I have modified the sauce recipe to a more accurate option since my original version of this recipe, so the ingredient picture does not match exactly anymore.

Ingredient Tips and Substitutions

  • It doesn’t matter what size cashews you get (whole, halves, pieces) since we’re going to grind them up anyway
  • You can also use 1-2 tsp tamarind paste instead of the tamarind powder. Alternatively, sub in some rice vinegar if you can’t find it (it won’t taste exactly the same but is at least close)

Step By Step Instructions

  1. Chop the nuts into small pieces using a food processor (or by hand with a Chef’s knife if you don’t have one). Use a blender or food processor to mix all the other ingredients for the dipping sauce until well combined (thin with a little water if it’s too thick). Then, fold in the chopped nuts and set aside. Note: I used to blend the nuts along with the other ingredients, but find it gets too pasty and cloudy because it starts turning into cashew butter

  1. In a mixing bowl, combine the avocado chunks, chopped sundried tomatoes, minced red onion and cilantro, salt, and lemon juice, and stir to distribute everything evenly

  1. Fill a small bowl with water. Lay an egg roll wrapper onto a clean work surface oriented like a diamond, and add about 2-3 Tbsp of the avocado filling into the center of it

  1. Dab your finger into the water, and run it along the outside edge of the egg roll wrapper until it is entirely wetted

  1. Fold the bottom triangle of the egg roll wrapper up over the filling, pressing to secure it. Then, fold in the two sides. Roll the egg roll away from you until it rolled up into a tube shape, and press the final corner to seal. Repeat until all egg rolls are rolled

  1. Place your avocado egg rolls into your air fryer’s basket or rack in a single layer, allowing air space between them, and spray the tops with a mist of olive oil spray
