Parmesan crusted cabbage is created by placing grated parmesan and whatever seasonings you like down on a flat pan, and then adding a slice of cabbage on top.

Usually, it would be baked in the oven, which melts the cheese onto the cabbage and creates a crunchy, flavorful crust!

However, I’m using my air fryer instead, which delivers all that great caramelization without having to fire up the big oven. It saves time, as well as being a great alternative if you don’t have a full sized range.

  • 1 cup grated parmesan cheese
  • 4 Tbsp olive oil
  • ½ Tbsp dried parsley
  • 1 Tbsp minced garlic
  • ½ tsp salt (or to taste) 
  • ½ tsp black pepper (or to taste)

  • This recipe scales well, so if you want to use a whole cabbage or make a larger batch, just double it (or more)
  • Green cabbage is the most common, but you could use red, Napa, or another variety of cabbage if you’d like (cooking times may change slightly)
  • All of the seasonings are adjustable to taste and by preference (I just like the garlic parmesan combination personally). Other great options include Italian seasoning, garlic or onion powder, chives, thyme, paprika, or add some red pepper flakes for heat

Step By Step Instructions

  1. Cut a piece of parchment paper or nonstick foil to fit in your air fryer’s basket or rack (you need this to prevent the cheese falling through the grates, and to prevent sticking)
  2. Wash your cabbage, and then cut it into approximately ½” thick slices, then cut each slice in half to make a halfmoon shape. Note: I leave the core in for stability (you’ll just eat around it). You could also remove it and then skewer the cabbage slices so they stay together

  1. In a bowl, combine the parmesan cheese, olive oil, and all of the seasonings, and stir to make a paste

  1. Spread the parmesan mixture onto the foil or parchment paper, spaced out to fit the cabbage slices. Tip: you can lay the cabbage slices out to see how they fit in your basket and then base it off of that

  1. Add the cabbage slices over top of the parmesan mixture, and press them down so they are well stuck into the mixture. You can add more seasoning on top of the cabbage if you want, but this is optional

  1. Cook on the air fry setting at 400°F for 10 minutes (until you see the edges of the cheese start to brown)
  2. Cool for about 5 minutes (so the cheese firms up), then carefully flip the slices over so that the cheese side is now facing up. Cook for an additional 3-5 minutes until the entire surface is browned to your liking

  • ½ Small green cabbage (a small cabbage being around 5 inches)
  • 1 Cup grated parmesan cheese
  • 4 Tbsp olive oil
  • ½ Tbsp dried parsley
  • 1 Tbsp minced garlic
  • ½ Tsp salt (or to taste)
  • ½ Tsp black pepper (or to taste)

PARMESAN CRUSTED CABBAGE SLICES! They taste freaking DELICIOUS! I suggest parchment paper, unless your sheet pans are very nonstick reliable. I tested with two pans. • Ingredients: 1 small/medium cabbage, cut into 1/2 inch half moon slices (about 6 slices) 2 1/2 cups freshly grated Parmesan cheese 4-5 tbsp olive oil, plus more for the other side 1 1/2 tbsp Italian seasoning Chopped fresh parsley, optional Chopped pepitas, optional 1️⃣Preheat the oven to 400. Line a sheet pan with parchment paper (or use a NONSTICK sheet pan)2️⃣Add the Parmesan to the sheet pan, then add the seasoning and the oil. Mix together to make a paste. Divide into 5-6 equal sized portions and flatten to create a a half moon shape (large enough for each cabbage slice).
