These chocolate strawberry yogurt clusters are perfect dessert bites made with fresh berries and Greek yogurt. The microwave makes everything fast, with only about 15 minutes of active time required.
In a medium bowl, combine the chopped strawberries and Greek yogurt, stirring to mix them evenly
1 ½ Cups chopped fresh strawberries, 1 Cup honey vanilla Greek yogurt
Onto a baking sheet or rack lined with parchment paper, wax paper, or a silicone mat, drop 2 Tbsp of strawberry yogurt mixture at a time (you should end up with around 12). I like to give them a little press to flatten them out evenly
Place the sheet into your freezer and allow the clusters to freeze solid (generally about 1-2 hours depending on the size)
When the strawberry bites are fully frozen, add the chocolate chips and coconut oil to a microwave safe bowl. Microwave on high in 30 second intervals, stirring after each, until chocolate is fully melted and smooth (about 1 - 1 ½ minutes total in a 1000W microwave)
1 Cup semi sweet chocolate chips, 2 Tbsp coconut oil
Use a fork to dip the strawberry yogurt clusters into the chocolate, covering them completely. If you want to sprinkle yours with some sea salt, do so now
1 Tsp flaked sea salt
Place the coated bites back onto the baking rack, and return them to the freezer for about 20-30 minutes to allow the chocolate to harden
Serve chilled or frozen
Notes
You could use thawed and drained frozen strawberries if you prefer, but I like the texture of the fresh berries better here. You can also sub in other berries altogether, like blueberries!
Feel free to swap another flavor of Greek yogurt. Strawberry and vanilla are other good options. You can also use plain, and add 1 Tbsp of sweetener (such as honey, maple syrup, or agave) or 1 tsp extract (like vanilla) for flavor
If you don’t have semi sweet chocolate chips, dark chocolate chips are the next best option. However, you can also use milk chocolate or another favorite
The coconut oil keeps your chocolate from seizing. You could also use butter, but that’s a less healthy option for sure
I like to top my chocolate strawberry clusters with some sea salt for the sweet and salty combo, but that’s entirely optional!
I use my fork to flip the clusters over in the chocolate to coat both sides. If one does happen to fall apart, gently push it back together before putting them back in the freezer, and they’ll re-stick as they harden
Depending how big your clusters are and how thick you coat them, you may need more chocolate to get them all thoroughly coated
Chocolate covered strawberry yogurt clusters should be stored in the refrigerator and are generally good for 2-3 days
You may freeze them as well for a more ice-cream-like consistency. However, the strawberries do get a bit hard and may be tough for younger kids to eat
Exact nutritional values will vary based on brand and flavor of ingredients, size of your specific clusters, any additions or swaps, and quantity consumed, so please consider this a guideline only
