This easy air fryer blackberry cobbler takes half the time of a conventional oven! It’s bursting with fresh, juicy blackberries and perfect for summer.
4 7-oz ramekins(or another oven safe bowl that fits in your air fryer)
Spoon or spatula (for mixing)
Nonstick spray
Ingredients
10Ouncesfresh blackberries(about 2 cups)
¼Cupgranulated sugar
½Tspcornstarch
½Tspvanilla extract
1Tbsplemon juice
4Tbspsalted butter(melted)
½Cupall purpose flour
¼Cupgranulated sugar
½Tspbaking powder
½Cupheavy cream or milk
Instructions
In a medium bowl, combine the blackberries, ¼ cup granulated sugar, lemon juice, cornstarch, and vanilla extract. Mix well and allow to rest
10 Ounces fresh blackberries, ¼ Cup granulated sugar, ½ Tsp cornstarch, ½ Tsp vanilla extract, 1 Tbsp lemon juice
Using a second bowl, mix the flour, remaining ¼ cup granulated sugar, baking powder, melted butter, and cream, stirring until mixed well (some lumps are fine)
4 Tbsp salted butter, ½ Cup all purpose flour, ¼ Cup granulated sugar, ½ Tsp baking powder, ½ Cup heavy cream or milk
Preheat your air fryer to 325°F, or the closest setting your air fryer has
Grease 4 ramekins with nonstick spray (or whatever pan you’re using)
Divide the blackberries evenly amongst the 4 ramekins
Use a spoon to drop dollops of dough over top of the blackberry mixture (sprinkle with demerara sugar here if desired)
Place filled ramekins into the preheated air fryer basket
Cook on the air fry setting for 15-20 minutes at 325°F, until the crust is golden brown and cooked through and the filling is hot and bubbly
Serve warm with a scoop of ice cream or whipped cream on top
Notes
You can use frozen blackberries instead of fresh (and you don’t need to defrost them)
The sugar may be swapped for brown sugar or a substitute such as Stevia
If you don’t have cornstarch, you may use flour instead
The vanilla may be swapped for almond or lemon extract for different flavor options
You may swap in lime juice in place of lemon juice if preferred
The flour and baking powder in the topping mix can be substituted by self raising flour instead
Feel free to sprinkle some demerara sugar over top of the topping before baking for extra texture and crunch
This cobbler is delicious on its own, but can be topped with vanilla ice cream or whipped cream for the perfect bite!
If your dough starts to get too brown for your liking during cooking, add a piece of foil over the top (but depending on your air fryer, you may not really need it at all - I never use it)
My blackberry cobblers were perfect after 15 minutes in a Ninja Dual Zone air fryer. Other air fryers may vary, and time will also vary based on the size of your baking dishes
Store leftover blackberry cobbler in the refrigerator for up to a week
To reheat, place a portion in the microwave for about 30 seconds on high. Alternatively, you may place the pan back in the air fryer for 4-6 minutes at 325°F or until warmed through. However, I think the microwave is actually better in this instance for maintaining softness
