Use a sharp knife to cut your avocado in half, then twist to open. Remove the pit using a spoon or a knife
1 Ripe avocado
Crack the eggs (one in each half) into the space left by the pit in your avocado
2 Medium eggs
Place the egg-filled avocado halves into the air fryer (egg side up)
Cook on the air fry setting at 400°F for 6 minutes, or until whites are set
If you’d like your eggs more done, add additional cooking time in 1-minute increments until desired consistency is reached
Top with salt and pepper, and any other toppings desired before serving

Notes
I find that medium eggs work best, but large is fine as well. You just may have some extra whites, or need to scoop out some pulp to fit them
Feel free to add some cheese: cheddar and feta are great options
Spice things up with hot sauce or sweet chili sauce on top
Add crumbled bacon, dried beef, or diced ham
Top with a squeeze of lime juice, chopped cilantro, or salsa
Use everything bagel seasoning or your favorite seasoning blend as a topper (I also enjoy garlic powder and paprika)
I do not preheat my air fryer for this recipe. If you do, reduce cooking time by a minute to start
For hard set yolks, add an additional 2-3 minutes to cooking time
You may line your air fryer baskets with parchment paper for easier cleanup if desired, as it is common for some egg to run over during cooking. You may also use a spoon to deepen the pit well to help better contain your eggs if they’re shallow
If you can’t get your avocados to sit flat, you can cut a thin piece of the bottom off to create a flat surface. Just don’t cut entirely through the avocado flesh or your egg will spill out!
You can store any leftover avocado eggs in the refrigerator for up to 3 days. If you do so, I highly recommend coating the avocado in lemon or lime juice to prevent it from turning brown
While you can technically reheat avocado baked eggs, they are best fresh. The egg will overcook and be rubbery upon reheat. If you want to, though, air fry at 350°F for about 3 minutes to reheat
