Air fryer avocado toast is a quick and easy way to prepare your favorite creamy and crunchy breakfast. Whether you top it with a runny egg and meat is up to you, but it’s delicious either way!
1Tbspminced dried beef(rinsed and drained in warm water per directions)
1 ½Tspeverything bagel seasoning
Instructions
Place your bread into the air fryer basket in a single layer
2 Slices whole grain bread
Air fry at 400°F for 3-5 minutes, until toast is browned, then remove and set aside
Cut your avocados in half lengthwise and twist open
2 Medium ripe avocados
Use a spoon to pop out the pit. Then, run the spoon along the outside edge of the avocado (between the skin and flesh). Push the spoon under the front edge and work towards the back, scooping out the flesh onto a bowl or plate
Smash the avocado into a lumpy paste with a fork (if this is difficult, your avocado isn’t fully ripe)
Add the salt, pepper, garlic powder, and lemon juice and stir to combine. Taste and adjust seasoning levels if needed
½ Tsp salt, ½ Tsp garlic powder, ½ Tsp black pepper, 1 Tsp lemon juice
Spray two ramekins with nonstick spray
Fill each ramekin with 2 tsp water and crack an egg into each
2 Large eggs
Place the ramekins into the air fryer basket
Cook for 6-8 minutes at 350°F, or until whites of eggs are set
Assemble avocado toast by spreading the avocado paste on top of the toasted bread, and sprinkling minced beef over it
1 Tbsp minced dried beef
Use a spatula to hold the egg in place while you drain the water, then transfer the egg on top of the toast. Sprinkle with everything bagel seasoning
1 ½ Tsp everything bagel seasoning
Cut in half if desired and serve
Notes
You can use any type of bread you’d like, but I recommend something heartier than standard sandwich bread, such as an Italian boule, sourdough, or similar
The seasonings are all adjustable to taste, so feel free to add more or less to your liking
Lime and lemon juice are interchangeable. If you don’t have either, make sure to enjoy immediately so you don’t end up with brown, sad avocado
The dried beef can be swapped for biltong, jerky, or turkey bacon if desired, or omitted completely
The eggs are also optional, and can be cooked any way you like
Avocados have a lot of natural fat, but if you prefer, you can butter your bread before toasting it
Depending on the size of your avocados and your bread, you may have enough to make more than 2 toasts
If preferred, you can slice your avocado into thin slices and spread it along the toast. Sprinkle the seasoning over top of it if you choose to do this
The mashed avocado can be stored in the refrigerator for up to 4 days, so long as you’ve added lemon or lime juice to it
You should not store avocado coated bread, as the bread will become soggy. Simply toast the bread when you are ready to eat and spread reserved avocado over it
