Instructions
Preheat your air fryer to 375°F (or the closest setting your air fryer has)
In a bowl, combine the hash browns, olive oil, and seasonings, mixing so they’re evenly coated
16 Ounces hash brown potatoes, such as Simply Potatoes, 2 Tbsp olive oil, 1 Tsp salt, 1 Tsp garlic powder, 1 Tsp onion powder, 1 Tsp paprika, ½ Tsp black pepper
Place the hash browns in an even layer across the bottom of a greased casserole dish or similar
Set the pan into the preheated air fryer basket
Cook on the air fry setting for 15 minutes at 375°F, stirring once after 10 minutes, until potatoes are soft and browned on the edges
Create four wells in the potatoes, and crack your eggs into the wells
4 Large eggs
Return to the air fryer and cook for 3 minutes
Add the shredded cheese on top of the potatoes (try not to cover the eggs)
½ Cup shredded sharp cheddar cheese
Cook for an additional 3-5 minutes until cheese is melted and the whites of the eggs are set
Garnish with green onions and hot sauce before serving

Notes
You can use either diced or shredded hash brown potatoes, and while I’m using refrigerated fresh, frozen options are fine too
All seasonings are adjustable to taste (or may be omitted or swapped if you don’t link something)
Feel free to adjust the recipe based on how many you’re feeding - use 1 egg for every 1 cup of potatoes
If you don’t like hot sauce, salsa is another great option, or you can skip it entirely!
Meat Variation: Add ½ cup cooked meat to the potatoes halfway through cooking. Great options include bacon, ham, breakfast sausage, Spam, kielbasa, or other breakfast meats
You can adjust the cooking time before adding cheese longer if you don’t want runny yolks in your eggs
Store leftover hash in the refrigerator in an airtight container for 3-4 days
Reheat hash browns in the air fryer for 5 minutes at 375°F. They are best stored and reheated without eggs (add fresh eggs if desired before reheating). However, you may reheat the eggs if desired in this manner as well, but the yolks will no longer be runny
