These mini air fryer crustless steak and spinach quiche are packed with flavor! They’re perfect for breakfast, brunch, and other meals when paired with sides.
Preheat your air fryer to 325°F (or the closest setting your air fryer has)
Spray your mini pie pans with nonstick spray
Divide the steak, spinach, and cheese evenly across the bottom of the pans
½ Cup cooked steak, ¼ Cup chopped spinach, ¼ Cup crumbled feta cheese
In a medium bowl, combine eggs, milk, Dijon, salt, and pepper and whisk to break up the eggs and blend everything together
4 Large eggs, ⅓ Cup milk, 1 Tbsp Dijon mustard, ½ Tsp salt, ½ Tsp white pepper
Pour the egg mixture evenly over top of the other items in the pans. It should cover the other ingredients, but do not fill the pan more than ¾ full to allow for expansion during cooking
Place the dishes into the preheated air fryer basket
Cook for 10-14 minutes at 325°F until quiche is puffy, lightly browned, and firm to the touch (the middle may look wet, but shouldn’t jiggle)
Cool for about 5 minutes before tipping the quiche out of the pan and serve (or feel free to serve directly from the pan once it’s cool enough)
Notes
Milk may be swapped for half and half if preferred for a creamier texture
The steak can be swapped with any cooked meat you like (or left out entirely for a vegetarian option)!
If you don’t like feta cheese, swap it for an equal amount of goat cheese, shredded mozzarella, cheddar, or swiss cheese
Spinach may be swapped for broccoli or asparagus if preferred
My mini crustless quiches were perfect after 10 minutes of cooking in 4” diameter pans in a Ninja air fryer. Other pan sizes and air fryers may vary slightly
A full sized crustless quiche (made in a full size pie or tart pan; not mini pans) will take closer to 25-30 minutes to cook if you opt for that
Store leftover spinach quiche in the refrigerator for up to 3 days, or freeze for up to 3 months
To reheat crustless quiche, place a mini quiche or slice or a full size quiche into the air fryer for 3-5 minutes at 300°F or until warmed through. Alternatively, it may also be microwaved for about 1 minute
