Quiche is one of my favorite brunch foods. Of course, you can enjoy it for breakfast, lunch, or even dinner with a few sides. This crustless steak and spinach mini quiche air fryer recipe is so easy to throw together, you’ll want to enjoy brunch every day!
Why You’ll Love This Recipe
These adorable mini quiche cook up quickly and easily in your air fryer. That’s not to say you can’t make a full size one either – you certainly can! However, the mini are lovely since they’re a single portion each, making them great for a brunch spread.
While this recipe is a crustless quiche which looks similar to a frittata, it’s equally delicious if you do want a crust. My Air Fryer Quiche With Crust recipe explains how to make one with crust (and a slightly creamier dairy ratio) if you prefer, and you can swap in whatever fillings you like!
This recipe is packed with a steak and spinach combination that’s filling and delicious, and a great way to use up leftover steak from yesterday’s barbecue!
If you’re pressed for time, you can still enjoy a deliciously flaky appetizer by cooking Frozen Mini Quiche in the Air Fryer!
What You’ll Need: Ingredients
- 4 large eggs
- ⅓ cup milk
- 1 Tbsp Dijon mustard
- ½ cup cooked steak, cut into small pieces
- ¼ cup crumbled feta cheese
- ¼ cup chopped spinach, drained
- ½ tsp salt (or more to taste)
- ½ tsp white pepper (or more to taste)
Special Equipment Note: You’ll need some form of oven safe pans that fit in your air fryer for this. I’m using 4 mini tartlet pans, but you can also use mini pie pans, mini tart pans, ramekins, small muffin pans, or 6-8 silicone muffin cups.
Ingredient Notes and Substitutions
- Milk may be swapped for half and half if preferred for a creamier texture
- The steak can be swapped with any cooked meat you like (or left out entirely for a vegetarian option)!
- If you don’t like feta cheese, swap it for an equal amount of goat cheese, shredded mozzarella, cheddar, or swiss cheese
- Spinach may be swapped for broccoli or asparagus if preferred
How to Make Air Fryer Crustless Spinach Quiche
- Preheat your air fryer to 325°F (or the closest setting your air fryer has)
- Spray your mini pie pans with nonstick spray
- Divide the steak, spinach, and cheese evenly across the bottom of the pans
- In a medium bowl, combine eggs, milk, Dijon, salt, and pepper and whisk to break up the eggs and blend everything together
- Pour the egg mixture evenly over top of the other items in the pans. It should cover the other ingredients, but do not fill the pan more than ¾ full to allow for expansion during cooking
- Place the dishes into the preheated air fryer basket
- Cook for 10-14 minutes at 325°F until quiche is puffy, lightly browned, and firm to the touch (the middle may look wet, but shouldn’t jiggle)
- Cool for about 5 minutes before tipping the quiche out of the pan and serve (or feel free to serve directly from the pan once it’s cool enough)

Recipe FAQs
Why Is My Crustless Quiche Soggy?
Crustless quiche is soggy when too much moisture is present. Make sure to cook meats and vegetables before adding them, and drain out any excess moisture.
Avoid high water content ingredients like tomatoes, and opt to add those as a topping before serving instead.
Is Crustless Quiche Just an Omelet?
No, crustless quiche is not just an omelet. In fact, it’s closer to a frittata than an omelet.
However, a frittata still has a different ratio of eggs to dairy, as is usually started on the stove before transferring to an oven.
How Do You Know When Crustless Quiche is Done?
Crustless quiche is done when the eggs are puffed, the top is lightly browned, and the center is no longer jiggly. Insert a butter knife into the center and remove it, and it should come out clean.
If it seems very close, letting the quiche sit in the pan for 10-15 minutes to cool generally allows it to finish setting.
What Temperature Do You Cook Crustless Quiche in the Air Fryer?
Typically, you cook crustless quiche at a temperature of 325°F in the air fryer. This is the right temperature to get it cooked without burning the top.
If you prefer a darker brown top, the temperature may be bumped to 350°F instead.
How Long Does it Take to Cook Crustless Quiche in the Air Fryer?
Typically, it takes between 12 and 14 minutes to cook crustless quiche in the air fryer. The specific time will vary based on the size of your quiche as well as your air fryer.
Make sure to cook in small increments when additional time is needed to prevent it overcooking and becoming rubbery.
Recipe Pro Tips
- My mini crustless quiches were perfect after 10 minutes of cooking in a 4” diameter pan in a Ninja air fryer. Other pan sizes and air fryers may vary slightly
- A full sized crustless quiche (made in a full size pie or tart pan; not mini pans) will take closer to 25-30 minutes to cook if you opt for that
Storage and Reheating
- Store leftover spinach quiche in the refrigerator for up to 3 days, or freeze for up to 3 months
- To reheat crustless quiche, place a mini quiche or slice or a full size quiche into the air fryer for 3-5 minutes at 300°F or until warmed through. Alternatively, it may also be microwaved for about 1 minute
