Quick and Easy Air Fryer Greek Potatoes With Lemon
These quick and easy air fryer Greek potatoes are a flavorful side dish that’s ready in under 30 minutes. They’re perfect for weeknights, holidays, and everywhere in between!

Instructions
Preheat your air fryer to 400°F
Cut your baby potatoes into halves, or quarters if they’re particularly large to keep even sizes
1 ½ Pound bag baby yellow potatoes
In a bowl, combine the potatoes with all the remaining ingredients, and stir to thoroughly coat
1 ½ Tbsp olive oil, ½ Lemon, juiced, 1 Tsp Greek seasoning, 1 Tsp dried oregano, 1 Tsp garlic, ½ Tsp chicken bouillon powder, ½ Tsp salt, ½ Tsp black pepper
Place the potatoes into your preheated air fryer basket in a single layer
Cook on the air fry setting for 8 minutes
Stir or shake the basket, then cook for an additional 8 minutes
Greek potatoes are done when the outside is browned and you can pierce them easily with a fork. Add additional time as needed to achieve this consistency (I’ve never had it take longer than 20 minutes total)
Serve with lemon wedges, fresh herbs, and crumbled feta if desired
Notes
If you have trouble finding baby potatoes, you can use the same weight of large yellow, red, or russet potatoes, cut into smaller pieces
It’s also fine to substitute other baby potato varieties, such as red or mixed (though I’ve found purple potatoes take a couple minutes longer to cook)
While olive oil is most traditional, you can swap in another high smoke point oil like avocado or grapeseed
I prefer fresh lemon juice but the bottled is fine as well
The chicken bouillon powder replaces the flavor from chicken stock, which is traditionally used when the dish is baked. If you want to keep this recipe vegetarian, however, it may be omitted
Garlic paste tends to mix well with the potatoes, which is why I prefer it over minced. The minced will sometimes burn in the air fryer. You can also substitute the fresh garlic for ½ tsp of garlic powder if that’s easier
When squeezing a lemon, squeeze it into your hand, a strainer, or a juicer. This allows you to catch the seeds before they end up in your dish!
When you put the potatoes in the basket, there will be some extra sauce at the bottom of the bowl. You can add this to the air fryer (as long as your basket is clean) to pour out with the potatoes. Get those browned crispy bits too - they’re worth it! Alternatively, reserve it and drizzle the remainder over the potatoes once cooked
My Greek potatoes were perfectly done after 16 minutes total in a Ninja air fryer. Other brands of air fryer may vary slightly
