Elegant chocolate covered strawberries come together quickly and easily thanks to your microwave. Whip them up for a sweet treat and decorate them for any occasion.
Bring your strawberries to room temperature, and make sure they are completely dry if you washed them recently
1 Pound fresh strawberries
Line a cooling rack or cookie sheet with wax paper or a silicone baking mat
Add chocolate chips and butter to a small microwave safe bowl (deeper is preferable to wider in this case)
12 Ounce bag semi sweet chocolate chips, 2 Tbsp butter or coconut oil
Microwave the bowl on high for 30 seconds. Stir, then microwave in additional 30 second bursts until the chocolate is completely smooth
Hold your strawberry by the stem (or put a stick or a fork in it to assist)
Dip the strawberry into the chocolate, then twist it as you pull it back out to remove excess. Dab any lumps off on the edge of the bowl
If you are adding sprinkles, roll the coated strawberry in the bowl of sprinkles while it’s still wet (optional)
Sprinkles or candy melt for decoration
Place the dipped strawberry on your wax paper lined rack
Repeat until all strawberries are dipped
If desired, add your candy melt stripes on the strawberries (optional)
Allow dipped strawberries to rest for 30-40 minutes to set completely (it’s best if you can put them in the refrigerator for this)
Store in a dry place and enjoy within 2 days for best results!
Notes
This amount of chocolate should be enough for around 24 large strawberries. While you can reduce the amount, I find it’s harder to dip and coat it well if your bowl isn’t full
The larger your strawberries are, the better, and if you can find ones with stems it will make life easier. Also choose good looking berries with little bruising. You can also substitute pineberries if preferred, or other types of fruit like apples and orange slices
Dark, milk, and white chocolate are great alternative options. I like the sweetness balance with the semi-sweet
My chocolate melted completely after 1 ½ minutes in a 1000W microwave. Other wattages may vary
It’s important to add a little bit of fat to the chocolate so that it doesn’t become overly brittle when hard. Butter and coconut oil are the two most common choices, but you can use other neutral oils or even shortening in a pinch. If your chocolate starts to seize, add some more oil and reheat it slightly
If you want to use sprinkles, pour them in a small bowl so you can roll the strawberries in them immediately after dipping. Drizzling can be done later, after the strawberries start to set
If you plan to drizzle colored candy melts, you can use a spoon, a few toothpicks, a piping bag, or a ziploc with the corner cut out to create even lines across your strawberries
