Air Fryer Avocado Egg Rolls Cheesecake Factory Copycat (With Sauce)
Air fryer avocado egg rolls come out crispy and delicious with far less oil than deep frying. This version is just like Cheesecake Factory’s popular appetizer!
3medium-large avocados, peeled, pitted, and diced(use 4 if they are small)
2Tbspminced red onion
1Tbspfinely minced fresh cilantro
6sun dried tomato halves, roughly chopped(packed in oil variety)
½tspsalt
½tsplemon (or lime) juice
8egg roll wrappers
olive oil spray(or similar)
For the Cashew Tamarind Sauce
¼cupcashews(roasted and salted)
⅛cupfresh cilantro leaves(finely chop if not using a blender)
1Tbsptamarind powder
¼cupsweet chili sauce(Thai style; not the tomato based kind)
½tspyellow curry powder
½tspsalt(or to taste)
Instructions
Chop the nuts into small pieces using a food processor (or by hand with a Chef’s knife if you don’t have one). Use a blender or food processor to mix all the other ingredients for the dipping sauce until well combined (thin with a little water if it’s too thick). Then, fold in the chopped nuts and set aside. Note: I used to blend the nuts along with the other ingredients, but find it gets too pasty and cloudy because it starts turning into cashew butter
¼ cup cashews, ⅛ cup fresh cilantro leaves, 1 Tbsp tamarind powder, ¼ cup sweet chili sauce, ½ tsp yellow curry powder, ½ tsp salt
In a mixing bowl, combine the avocado chunks, chopped sundried tomatoes, minced red onion and cilantro, salt, and lemon juice, and stir to distribute everything evenly
3 medium-large avocados, peeled, pitted, and diced, 2 Tbsp minced red onion, 1 Tbsp finely minced fresh cilantro, 6 sun dried tomato halves, roughly chopped, ½ tsp salt, ½ tsp lemon (or lime) juice
Fill a small bowl with water. Lay an egg roll wrapper onto a clean work surface oriented like a diamond, and add about 2-3 Tbsp of the avocado filling into the center of it
8 egg roll wrappers
Dab your finger into the water, and run it along the outside edge of the egg roll wrapper until it is entirely wetted
Fold the bottom triangle of the egg roll wrapper up over the filling, pressing to secure it. Then, fold in the two sides. Roll the egg roll away from you until it rolled up into a tube shape, and press the final corner to seal. Repeat until all egg rolls are rolled
Place your avocado egg rolls into your air fryer’s basket or rack in a single layer, allowing air space between them, and spray the tops with a mist of olive oil spray
olive oil spray
Cook on the air fry setting at 400°F for 6 minutes, then flip, reapply oil, and cook for an additional 5-6 minutes, or until the egg rolls are brown and crispy. Times can vary between different air fryers, so adjust as needed
Serve hot with reserved dipping sauce!
Notes
It doesn’t really matter what size cashews you get (whole, halves, pieces) since you’ll chop them up anyway
You can also use 1-2 tsp tamarind paste instead of the tamarind powder. Alternatively, sub in some rice vinegar if you can’t find it (it won’t taste exactly the same but is at least close). Tamarind is most often available at Indian supermarkets, or you can order it online
I do notpreheat my air fryer for this recipe since I flip the egg rolls anyway. I do 6 minutes and then flip and do 5 on the other side, and they’re perfect in my Ninja Dual Zone air fryer. Other air fryers will vary slightly
Note that if you are making multiple batches you can reduce the cooking time to about 3 minutes per side (6 minutes total) for subsequent batches when the air fryer is hotter to start
Exact nutritional values will vary based on brand and flavor of ingredients, any sauces or sides added (this assumes use of the included sauce recipe), and quantity consumed, so please consider this a guideline only
