This easy Peeps martini has just 3 ingredients plus your favorite Peep marshmallow to top it off! It’s an Easter spin on a classic lemon drop, and perfect for Spring!
Shake vigorously until the mixture is well chilled and blended, approximately 20-30 seconds
Strain into prepared martini glasses
Top with a Peep (float it on the liquid in the drink) and enjoy!

Notes
You can also use marshmallow or vanilla flavored vodka, or soak some Peeps in vodka ahead of time to create an infused version!
If you don’t like limoncello, feel free to use white creme de cacao or another white chocolate flavored liqueur, or Bailey’s S’mores instead!
Instead of food coloring you could also add ½ ounce or so of grenadine, which will make it pink and add sweetness as well
Other rim options include shredded coconut (feel free to toss with dye to color it), or festive Spring sprinkles. You can use cream of coconut instead of lemon juice, or vanilla frosting if you’re using the chunkier sprinkles (it helps them adhere better)
A martini glass (regular or stemless) is the most traditional glass for serving the Peeps martini. However, you can use a coupe, margarita glass, or similar wide-opening glass instead
To adjust the strength of your drink you can add more or less half and half (or reduce the vodka). I consider this drink to be fairly strong as written
For color reference, I used 2 drops of red food coloring and one drop of blue in a quadruple batch. You’ll have to adjust based on quantity and desired color (I matched the sanding sugar I had)!
