Amazing air fryer blueberry scones cook up in under 15 minutes. They’re soft, bursting with fresh blueberries, and finished with a hint of lemon glaze!
In a large mixing bowl, combine flour, sugar, baking powder, and salt
2 Cups all purpose flour, ¼ Cup granulated sugar, 2 Tsp baking powder, ½ Tsp salt
Cut the butter into cubes, then mix into the dry ingredients by hand until coarse crumbs form (the heat from your hands helps this process)
6 Tbsp cold butter
Add the egg and milk, stirring to thoroughly combine
1 Large egg, ⅓ Cup milk
Fold in the lemon zest and blueberries, gently kneading a bit if needed to get the dough together
1 Tbsp lemon zest, ¾ Cup fresh blueberries
Flour your work surface and then pop the dough out on it. Pat it into a flat circle about 1” thick (it doesn’t need to be entirely precise)
(Optional) Brush the top of the dough with the remaining 1 Tbsp milk. Sprinkle 1 Tbsp demerara sugar over the top of it, pressing down slightly so it sticks

Cut the dough into 8 even pie-shaped wedges
Place the scones into your air fryer basket in a single layer, allowing some air space between them for expansion (use parchment or nonstick foil for easy cleanup)
Cook on the air fry setting for 10-12 minutes at 350°F, or until scones are golden brown
(Optional) While scones are baking, combine powdered sugar and lemon juice in a small bowl for the glaze
½ Cup powdered sugar, 1 ½ Tbsp fresh lemon juice
Remove the scones from the air fryer and cool on a wire rack
Drizzle glaze over top of scones and serve
Notes
The all purpose flour may be swapped for self rising flour (omit the baking powder) or whole wheat flour for a healthier option
Feel free to swap in almond milk if you need a dairy milk alternative
The lemon zest may be traded for orange or lime zest, or omitted altogether if you’d like plain blueberry
For vanilla icing instead of lemon, use 1 Tbsp milk and ½ tsp vanilla extract in place of the lemon juice. For thicker glaze, use 1 Tbsp total liquid instead
Try not to mangle the blueberries too much when working with the dough (though a little popping is inevitable)
You do not need to preheat your air fryer for this recipe. However, based on how long it takes your specific air fryer to get to temp, cooking times may vary by a minute or two
Use wax paper to cover your work surface for easy cleanup after cutting the dough and drizzling the glaze
Store leftover scones in an airtight container in a dark place for up to 2 days. For longer storage, they may be refrigerated for up to a week or frozen for up to 3 months
Scones are great at room temperature. However, you can reheat scones in the air fryer for 2-3 minutes at 350°F (add 2 minutes if reheating from frozen), or microwave for 30-40 seconds
