Air Fryer Pretzel Bacon Cheeseburger Biscuit Bombs
These air fryer biscuit bombs are loaded with a bacon cheeseburger filling and a pretzel crust. They’re perfect for a snack, appetizer, or meal when paired with sides!
Cook bacon in a skillet over medium high heat until desired level of crispiness (I cut mine in half so it fits better in the pan)
4 Slices bacon
Remove bacon to a paper towel lined plate to cool, and then add ground beef to the skillet
½ Pound lean ground beef
Cook beef, breaking it up into crumbles, until it is browned and cooked through (approximately 5-7 minutes)
Drain excess grease if needed, then season with burger seasoning
1 Tsp steak or burger seasoning
Crumble bacon and add back in to beef mixture
Open can of biscuits, separating each one
8 Ounce can biscuit dough
Using your palms or a rolling pin, flatten each biscuit to about ¼” thick
Place one quarter of American cheese in the center of the biscuit, then top with about 1 Tbsp beef mixture (the amount may vary based on the size of your specific biscuits)
2-3 Slices American cheese
Fold the edges of the biscuit up over the filling, pinching the seams to seal
Repeat until all the biscuit bombs are filled
Preheat your air fryer to 325°F (or the closest setting your air fryer has)
Heat the water on the stove or in your microwave (about 2 minutes in a 1000W microwave) until it’s about 110°F
4 Cups water
Add the baking soda to the water and stir until it dissolves
¼ Cup baking soda
Place the biscuit bombs into the baking soda water, making sure to coat all sides of the ball, for about 30 seconds
Remove from the water and sprinkle the tops with the sea salt while they’re still wet
½ Tsp sea salt
Place the biscuit bombs into the preheated air fryer basket, allowing some air space between them for expansion during cooking
Cook on the air fry setting for 8 minutes at 325°F. If a darker brown is desired, add additional time as needed in small increments
Serve with ketchup, mustard, onions, pickles, or other favorite burger toppings!
Notes
Any canned biscuit dough is fine, whether it’s Grands, buttermilk, or anything similar
You can sub ground turkey or even ground chicken for ground beef if preferred, scrambled egg for a breakfast biscuit bomb, or omit it entirely because bacon and cheese bombs are delicious too!
Swap turkey baconfor regular bacon if desired
You can use other varieties of cheese if preferred instead of American cheese. Cheddar is another great option. You’ll need ¼ of a slice per biscuit (so it will vary based on the size of your biscuit tube)
In lieu of sea salt for the topping, you can use everything bagel seasoning or sesame seeds if preferred
You can add ½ Tbsp ketchup and mustard, or 1 Tbsp onion or chopped pickles into your filling if everyone in your family likes them. If not, serve on the side!
If you don’t have a stove, you can chop the bacon and combine it with the ground beef, rolling them into small (1”) meatballs. Cook for 10-15 minutes at 400°F in the air fryer and then proceed
You don’t have to pretzel the bun if you don’t want to. Just skip the baking soda water bath if that’s your preference!
Try to keep the edges clean of filling when you’re stuffing the bombs, as this will give you a better seal
You will have some leftover filling more than likely, so feel free to double the amount of biscuits and freeze some for later!
It’s normal for some of the biscuit bombs to leak a little cheese during cooking. If you want, use some parchment or a liner under them to make cleanup easier
Store leftover bacon cheeseburger bombs in the refrigerator for up to 4 days, or individually wrap and freeze for up to 3 months
To reheat, air fry for 2-3 minutes at 350°F, or until warmed through (this works even from frozen)! Alternatively, wrap your biscuit bomb in a damp paper towel and microwave for 1 minute on high
