Parchment paper or silicone mat that fits in your air fryer
Ingredients
3tbspOlive oil
2largeEggs
1 cupAll purpose flour(plus extra for dusting)
⅓cup Granulated white sugar
1tspBaking powder
¼tspSalt
1tspOrange extract
½tspVanilla extract
½cup Toasted almond slices
Instructions
Mix the oil, eggs, extracts, and sugar in a bowl, stirring well to combine
3 tbsp Olive oil, 2 large Eggs, ⅓ cup Granulated white sugar, 1 tsp Orange extract, ½ tsp Vanilla extract
Add in the dry ingredients and stir until fully incorporated. The dough should be sticky but workable. Add up to an additional ¼ cup of flour if needed
1 cup All purpose flour, 1 tsp Baking powder, ¼ tsp Salt
Fold in the sliced almonds into the dough
½ cup Toasted almond slices
Preheat your air fryer to 320°F (or 325°F depending on your air fryer’s settings)
Place your dough ball on a piece of parchment paper or silicone baking mat that fits in your air fryer basket
Using your hands, pat the dough ball down into a rectangular shape that’s around ½” thick. Pro tip: dust your hands in flour or use a second sheet of parchment to press the dough to prevent sticking
Place the dough rectangle on the parchment paper into the preheated air fryer basket
Cook on air fry setting for 10 minutes at 320°F
Remove the biscotti loaf from your air fryer basket and transfer to a cutting board (you can leave the paper in the air fryer).
Once cool enough to cut (about 5-10 minutes of resting), slice the loaf into approximately 1” thick slices using a serrated knife
Transfer the slices back to the air fryer, leaving air space between each one (do this in batches if necessary)
Cook the slices for an additional 7-10 minutes at 320°F, or until crisp and desired level of browning is achieved. Flipping halfway through will help with more even browning, but do so carefully as the cookies are delicate
Dip in chocolate, dust in powdered sugar, or enjoy as is!
Notes
You can substitute vegetable oil (or really any other oil) or an equivalent amount of unsalted, melted butter in place of olive oil
Brown sugar in the same amount can be substituted for the white sugar if desired
To change the flavor of your biscotti, substitute different flavors of extracts as desired
For a stronger orange flavor, add in 1 tsp grated orange zest in addition to the extract
This recipe is also great with walnuts, pecans, or pistachios in place of almonds
Don’t let the loaf of biscotti cool too long before slicing or else it will get too hard and make the job difficult (but not resting enough will give you crumbly dough)
If you don’t have parchment paper, you can spray the basket with nonstick spray instead, but I find the paper makes transferring easier
I did two smaller loaves because I have a Ninja Dual Zone air fryer with two baskets. Most single basket air fryers you should be able to fit one larger loaf in
The level of browning shown is 7 minutes at 325°F in my Ninja for reference. Other air fryer makes and models may vary in terms of cooking times
