Roasted tomatoes, onions, and garlic form the base for this thick, creamy soup. Finish with herby cheese and cream for a scrumptious bowl that’s perfect for cold days!

Ingredients
4Roma tomatoeshalved
10oz Cherry tomatoes
1 Onion (small to medium), quartered(red, yellow, or sweet onion)
1Garlic bulbtop sliced off
4ozHerb & garlic soft cheese (such as Boursin)cut into cubes
ttbspOlive oil
Salt & pepper to taste(approximately 1/2 tsp each)
1/4cupHeavy cream or half & half(or more if desired)
2leavesBasil(fresh)
Croutons (optional)
Instructions
Preheat your air fryer to 400°F, following manufacturer guidelines
Place halved roma tomatoes in preheated air fryer basket, cut side up

Add cherry tomatoes, onion quarters, and garlic bulb cut side up to the basket
10 oz Cherry tomatoes, 1 Onion (small to medium), quartered, 1 Garlic bulb
Drizzle or mist with olive oil (make sure to oil the garlic bulb well) and season with salt and pepper
t tbsp Olive oil, Salt & pepper to taste
Cook on air fryer setting for 20 minutes at 400°F (no need to stir)
Add herb cheese cubes to basket and cook for an additional 5-10 minutes until cheese begins to brown
4 oz Herb & garlic soft cheese (such as Boursin)
Remove everything from the air fryer. Peel skins of tomatoes if desired (optional) - they should be loose. Squeeze garlic cloves from their skins and discard skin
Season with additional salt and pepper to taste, and add 2 fresh basil leaves
2 leaves Basil
Add everything to a blender, food processor, or into a bowl for use with an immersion stick blender
Pulse until smooth, then thin with heavy cream or half and half to desired consistency
1/4 cup Heavy cream or half & half
Top with croutons or serve with a side salad or sandwich

Notes
I am using an heirloom cherry tomato mix for variety, but any cherry or grape tomatoes are fine
The best onions are red, sweet, or yellow. I used half red, half sweet here
Boursin pre-cubed cheese is very convenient, but you can also chop up a larger block. The herb and garlic is best I think, but the shallot and chive variety works well too
Olive oil may be swapped out for avocado oil, grapeseed oil or a similar high smoke point oil if preferred
The immersion (stick) blender will give you a pretty chunky consistency (pictured). If you prefer smoother, use a regular blender instead
This recipe is very adjustable to taste. You can add more tomatoes if you like it thinner, less cheese if you want to reduce thickness, and reduce garlic if you want it less bold
Fat free half and half works great in this recipe if you’d like to reduce calories a bit, or you may substitute a non-dairy milk as well
This soup comes out in a bisque-like consistency, which is hearty and perfect for dipping rolls, grilled cheese, etc
Add additional cream, stock, and/or tomatoes if you would like a thinner consistency
