This Jelly Belly pomegranate martini is the perfect adult treat for Easter! It uses jelly bean infused vodka along with pomegranate, orange, and lemon flavors for a festive cocktail.
Shake for 20-30 seconds, until well mixed and chilled, then strain into a martini glass (or similar)
Garnish with pomegranate arils and a slice of lemon if desired, and enjoy

To make Jelly Belly infused vodka, combine ¼ cup Jelly Belly jelly beans with ½ cup plain vodka in a mason jar (or similar). Let it sit at room temperature for at least 48 hours, shaking occasionally. Strain before using. Note:if you want a specific color or flavor make sure to choose jelly beans accordingly (but this is optional - the pom juice hides the color of the infused vodka)
You can use any brand of pomegranate juice, and blends are fine as well (like pom cherry, pom cranberry, or similar)
Substitute lime juice instead of the lemon juice if desired
If you use plain vodka and not the infused version, then I recommend adding ½ ounce of simple syrup to compensate for the sweetness
Garnishes are optional, but can include a slice of lemon or twist of lemon rind, pomegranate arils, Jelly Belly jelly beans, or a sugar rim on the glass
While martini glasses are the most common choice, you can also serve a pomegranate cosmo in a coupe, or even a white wine glass
