Air Fryer Spinach Stuffed Salmon With Boursin & Tomatoes
This easy air fryer spinach stuffed salmon recipe features creamy Boursin cheese and tomatoes for a savory delight. It cooks up juicy and delicious in under 15 minutes!
5.2Ounceblock Boursin cheese(I use garlic and herb flavor)
1Cupchopped spinach(thawed if frozen and drained)
1Tspminced garlic
1Tbspsun dried tomatoes, chopped(about 4 halves)
1Tbspolive oil
½Tspsalt(or to taste)
½Tspblack pepper(or to taste)
½Tsppaprika
½Tsponion powder
Instructions
Pat the salmon dry, remove skin if desired (optional), and then slice the salmon vertically, leaving about ¼” at the bottom to hold it together
1 Pound salmon filets
Rub the salmon in the olive oil, and then season all sides with the salt, pepper, onion powder, and paprika
1 Tbsp olive oil, ½ Tsp salt, ½ Tsp black pepper, ½ Tsp paprika, ½ Tsp onion powder
In a bowl, combine the Boursin, drained spinach, garlic, and sun dried tomatoes, and mix together
5.2 Ounce block Boursin cheese, 1 Cup chopped spinach, 1 Tsp minced garlic, 1 Tbsp sun dried tomatoes, chopped
Place about ¼ cup (depending on size of each fish piece) of the cheese mixture into the cut on the salmon, pressing it in well and mounding it up evenly (repeat for each piece of salmon)
Add the stuffed salmon to your air fryer’s basket or rack in a single layer, with space between each one for air flow
Cook on the air fry setting at 375°F (or 380°F, depending on available settings) for 10-15 minutes, until salmon is cooked through and cheese is browned. The salmon should flake easily with a fork, or reach at least 145°F per USDA guidelines for food safety
Serve hot with your favorite sides!
Notes
I use skinless salmon for this, but you can use skin-on if preferred. Look for wider slices or filets when possible, as this will make stuffing them easier
You can use any flavor Boursin you like (shallot and chive is another great choice). Also feel free to substitute cream cheese, ricotta cheese, or cottage cheese instead
Instead of sun dried tomatoes, you can use a handful of fresh grape or cherry tomatoes (halved or quartered)
All seasonings are adjustable to taste (and you can omit/swap anything you don’t like). If you use an onion-flavor cheese, then swap the onion powder for garlic on the outside
Dip filling option: Instead of making your own filling, you can use about 1 cup of spinach and artichoke or spinach dip. This is a great way to repurpose leftovers!
You do not need to flip the salmon during cooking, as that would cause the filling to spill out
I cooked my spinach stuffed salmon at 375°F for 13 minutes total without preheating in my Ninja air fryer and it was perfectly cooked (verified via instant read thermometer). Other brands of air fryer will vary, and of course the size of your specific salmon filets can change that too
If you do preheat your air fryer, start with 2 minutes less cooking time to compensate
Store any leftover spinach and salmon in an airtight container in the refrigerator for up to 2 days
To reheat Salmon with spinach in the air fryer, place a portion in the air fryer and heat for about 5 minutes at 375°F. Actual time can vary slightly by air fryer and by the size of your specific piece of fish
Exact nutritional values will vary based on brand and flavor of ingredients, size of fish pieces, any adjustments or sides added, and actual quantity consumed, so please consider this a guideline only
