This chocolate raspberry mug cake is the perfect easy dessert for one. It only takes about a minute to cook, and uses a lot of pantry staples for a tasty sweet treat.
2Tbsp unsweetened cocoa powder(I use Special Dark)
½Tspbaking powder
½Tspvanilla extract
⅛Tspsalt
1Tbspbutter, melted(or sub oil)
3Tbspmilk(I use 2%)
2Tbspseedless raspberry jam(melted until runny)
Instructions
In a microwave safe mug, combine the flour, cocoa powder, baking powder, sugar, and salt, stirring to distribute evenly
3 Tbsp all purpose flour, 1 Tbsp granulated sugar, 2 Tbsp unsweetened cocoa powder, ½ Tsp baking powder, ⅛ Tsp salt
Add the vanilla extract, melted butter, melted jam, and milk, and stir until just incorporated (do not overmix)
½ Tsp vanilla extract, 1 Tbsp butter, melted, 3 Tbsp milk, 2 Tbsp seedless raspberry jam
Place the mug in the microwave and cook on high for 30 seconds. Add additional time in 15-second increments as needed, until center is just set (it will be slightly shiny on top still, but a toothpick inserted in the center should come out with wet crumbs, not batter)
Add toppings if desired, and enjoy warm, right from the mug!
Notes
You can also use 6-8 fresh or frozen raspberries in place of the raspberry jam. However, I like jam as it’s sweeter and you can avoid the seeds!
For extra chocolate flavor, add 1 Tbsp chocolate chips to your batter! Don’t like chocolate? Omit the cocoa powder and add 1 Tbsp flour for a vanilla raspberry mug cake variation!
If you are non-dairy, you can substitute oat milk, coconut milk, or almond milk for the dairy milk (and use oil instead of butter)
Instead of the all purpose flour, you can use almond flour for a gluten free option. It may take up to 30 seconds longer to cook, and I find it slightly more gummy texturally, but still delicious!
Toppings are optional, but can include fresh raspberries, whipped cream, ice cream, chocolate shavings, or chocolate sauce
This recipe was developed using a 1000W microwave. My mug cake was set after 45 seconds total. If you have a higher or lower wattage, your cake may require less or more time to cook through
