Instructions
In a microwave safe mug mix your dry ingredients first, then add the wet and stir until just combined (do not overmix). Make sure to scrape the sides down and smooth the batter for even cooking
¼ Cup all purpose flour, 2 Tbsp granulated sugar, ½ Tsp baking powder, ½ Tsp espresso powder, ⅛ Tsp salt, ½ Tsp vanilla extract, 1 Tbsp butter, 3 Tbsp milk
Cook in the microwave on high for 1 minute. Add additional time in 15-second increments as needed, until center is just set (it will be a little shiny still)
Combine the amaretto liquor with ½ tsp of espresso powder and pour over the still-warm cake (try to distribute well for best results)

Mix the mascarpone and powdered sugar together in a bowl, then top the mug cake with the mixture (smooth with a knife or spatula)
¼ Cup mascarpone cheese, 1 Tbsp powdered confectioner's sugar
Dust tops with cocoa powder (use a paper towel underneath to catch excess for easy cleanup)
½ Tsp cocoa powder
Enjoy immediately
Notes
You can use cake flour instead of all purpose flour, or use a baking mix base in place of the flour and the baking powder
The butter can be swapped for oil if preferred
Either espresso powder or instant coffee works (I just prefer espresso for the flavor here)
You can use whipped cream instead of mascarpone for the topping if you want (it’s just not as traditional)
To make multiple mugs for entertaining, cook the cakes (one at a time is best) and add the amaretto soak, then store them in the fridge for up to 48 hours. Top with mascarpone and cocoa powder just before serving!
Do not microwave your mascarpone to soften it! This will make it separate and turn into soup. Just let it soften at room temperature for a few minutes instead
My mugs are 6 ounces in size. I wouldn’t go smaller, but larger is totally fine (just expect to have extra space at the top)
I have a 1000W microwave and my cake was perfect after 1 minute. However, your times may vary based on microwave wattage, and mug size and type. If you overcook it slightly, don’t panic - the liquid you pour over after will help in this recipe
