Easy Cinnamon Roll Overnight Oats (Without Yogurt)
These cinnamon roll overnight oats are all the tastes of your bakery favorite, and creamy even without yogurt. Just 5 required ingredients and a few minutes to throw together is all it takes!
In a mason jar, Tupperware, or similar container, combine all ingredients and stir or shake to mix well
½ Cup rolled or old fashioned oats, ½ Cup unsweetened vanilla almond milk, 1 Tbsp brown sugar, ½ Tsp cinnamon, Pinch of salt, ½ Tsp chia seeds
Place the container in the refrigerator, and allow it to sit for at least 4 hours, but preferably overnight
Serve cold (or microwave for 1 minute to serve hot) with a spoon, or add more liquid if needed to thin for drinking consistency. Blending is optional, but it helps it pass through the straw easier
Notes
You can use any type of oats other than quick. Note that steel cut do take longer to soak and retain a chewier texture overall, but they work if you like that!
Any type of unsweetened non-dairy milk (coconut, macadamia, oat, etc) is fine if you don’t have almond. If you use a non-vanilla flavored variety, add ½ tsp of vanilla extract to compensate
You can substitute maple syrup in place of the brown sugar if needed (but it does lose some of that classic cinnamon roll flavor that way)
For a creamier option, add 1-2T of vanilla yogurt or cream cheese
If you plan to drink your overnight oats, double the liquid, and feel free to blend quickly to make it easier to get it through the straw! Adjust with more milk after blending to desired consistency
Since these oats don’t have fresh fruit, you can safely store them in an airtight container in the refrigerator for 4-5 days. This allows you to make a large batch at the beginning of the week and enjoy them for days!
If you would like to enjoy your overnight oats like more traditional warm oatmeal, just microwave for 45-60 seconds and stir before serving!
