4 7-Ounce ramekins(or a cake or casserole dish that fits in your air fryer)
Ingredients
For the Blueberry Filling
2Cupsblueberries(fresh or frozen)
2Tbspbrown sugar
1 ½Tbspcornstarch
1Tsplemon juice
For the Cobbler Topping
4 Tbspsalted butter(melted)
½Cupall purpose flour
¼Cupgranulated sugar
½Tspbaking powder
1Tspground cinnamon
½Cupmilk or cream
Instructions
In a mixing bowl, combine blueberries, brown sugar, cornstarch, and lemon juice. Mix and set aside
2 Cups blueberries, 2 Tbsp brown sugar, 1 ½ Tbsp cornstarch, 1 Tsp lemon juice
Using a second bowl, mix the butter, flour, sugar, baking powder, cinnamon, and milk or cream together until it forms a relatively smooth batter (some lumps are normal)
4 Tbsp salted butter, ½ Cup all purpose flour, ¼ Cup granulated sugar, ½ Tsp baking powder, 1 Tsp ground cinnamon, ½ Cup milk or cream
Preheat your air fryer to 350°F, and grease your ramekins or another baking dish you’re using
Spread the blueberry mixture into your greased dish, or divide evenly amongst the ramekins
Top with dollops of the cobbler batter. You do not need to spread or smooth this
Place the filled dishes into the preheated air fryer basket
Cook on the air fry setting for 15 minutes at 350°F, or until the cobbler is golden brown and bubbly
Cool for 5-10 minutes, then serve warm with a scoop of ice cream or whipped cream
Notes
Feel free to add ½ Tbsp fresh lemon zest in addition to the lemon juice in the filling for a slightly more tart variation. Or, change it up by using orange juice in place of the lemon!
All purpose flour may be swapped for whole wheat or gluten free flour, but the texture will change and be denser. You may also use self rising flour in place of the AP flour and baking powder
The cinnamon can be swapped for nutmeg, ginger, or cardamom, or omitted altogether if preferred. However, I feel it adds a nice touch of warmth for this recipe
You can add other berries to the mix as well if you’d like. Raspberries, blackberries, and strawberries are other great coordinating choices
If you’d like to use a bigger pan and make a larger batch, feel free to double the recipe
Feel free to use up to double the sugar or add as little as half in the filling to adjust sweetness
Make sure not to spread the topping evenly and to the edges when layering your cobbler, as you want room for the steam to escape at the filling to bubble up for caramelization
I use 15 minutes for ramekins and about 20 minutes for one larger pan for my blueberry cobbler in a Ninja air fryer. You may need to adjust cooking times slightly for different air fryers
For best results, store leftover blueberry cobbler in the refrigerator and consume within 2-3 days. You may also freeze the cobbler prior to cooking for up to 3 months
To reheat, place a cobbler portion in the air fryer for 3-5 minutes at 350°F, or until warmed through. Alternatively, you may microwave on high for 30-60 seconds, but the topping will become softer with this method
