Can't decide between Mexican or Italian? Try my air fryer taco stuffed shells recipe for a delicious blend of both!
12-ounce jumbo shells
1 Tbsp olive oil
1 pound ground beef
1-ounce taco seasoning
½ medium yellow onion
1 poblano pepper
Oil or nonstick spray
8-ounce block pepper jack cheese, cut ½” thick

Cook pasta shells according to package directions
Heat olive oil in a large skillet over medium high heat
Add diced onion and pepper, then cook 3-5 min until they begin to soften
Add ground beef to skillet and cook until the meat is browned
Drain any grease, then add taco seasoning and stir to combine
To assemble, first grab a shell, placing it in your palm so it opens
Add 1 Tbsp of the meat mixture to the shell, and top it with a piece of cheese
Place another shell over the first shell, creating a sealed taco stuffed shell
Repeat until all of your shells are stuffed
Preheat your air fryer to 400°F
Spritz with oil and air fry for 8 min at 400°F. Flip shells, reapply oil, and cook 5-7 more minutes
Serve taco stuffed shells with your favorite dipping sauces!
