Make delicious French cuisine from home by roasting ratatouille in the air fryer!
1 Eggplant
1 Zucchini (courgette)
1 Summer squash
1 Beefsteak tomato
½ Medium sweet onion
1 Tbsp minced garlic
3 Tbsp olive oil
1½ Tsp salt
½ Tsp black pepper
1 Tsp oregano
2 Tsp basil
Fresh parsley for garnish

Finely dice your onion
Add in minced garlic and mix
Spread the onion and garlic mixture in the bottom of your casserole dish
Slice the vegetables into approximately ¼” thick slices
In a bowl, combine olive oil, salt, pepper, and herbs
Toss the oil and seasoning mixture with your vegetables
Alternate vegetables in casserole dish to create a striped pattern
Air fry the vegetables for 20-30 minutes at 400°F
Use whatever vegetables you have on hand!
