Enjoy delicious mozzarella arancini rice balls made perfectly in your air fryer!
2 cups cold cooked rice
½ cup parmesan cheese
3 large eggs
2 Tbsp butter
1 shallot, 2 cloves garlic
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
2 mozzarella sticks
¼ cup all purpose flour
½ cup Italian seasoned breadcrumbs
Anyone who loves a zesty, cheesy Italian appetizer or snack
Melt butter with shallot and garlic until browned
Combine butter with cooked rice, 2 eggs, parmesan, salt, pepper, Italian seasoning, & red pepper flakes
Stir to combine well
Spoon 2 Tbsp of the mixture into your hand
Insert a mozzarella cube into the rice pile
Squeeze, and then roll into a ball using your hands
Chill the rice balls in the refrigerator for 30 minutes
Roll the arancini in the flour, then the egg, and finally the breadcrumbs
Cook the breaded arancini for 10-15 minutes at 370°F - flip halfway through
The arancini are done when golden brown with melty cheese inside!
