- Instead of a watermelon, for a smaller crowd, you can cut the remaining ingredients in half and serve this recipe in a mini watermelon (6-8” diameter), hollowed out limes (use about 6 limes, so 12 shells once you halve them), or about 24 standard Jello shot cups
- I use Sonic watermelon Jello which is larger than a traditional Jello brand box. If you use Jello brand 3 ounce boxes, get 3 instead and increase the Knox to 6 packets. Do not get Starburst brand watermelon Jello, as it is green colored instead of pink! You could also substitute another pink-colored flavor like strawberry if you like
- You need the Knox gelatin to get your Jello stable enough to stand when it’s in a watermelon. If you opt for limes or cups, you can omit this and only use the watermelon Jello

Step By Step Instructions
- In a mixing bowl (or similar), combine 1 cup cold water (or juice) and 2 cups cold vodka. Add in the 4 plain (Knox) gelatin packets. Stir or whisk it in, then allow it to sit for at least 2 minutes, until the gelatin blooms (it will form a bit of a skin on the top). I usually let it sit while I hollow out my watermelon or lime rind

- Boil the remaining 3 cups of water (or juice). Add it to a large microwave-safe mixing bowl or measuring cup, and heat until bubbling all over, at least 212°F (this takes me about 5 ½ minutes on high in a 1000W microwave). You could also use a kettle or heat it on your stovetop. Stir in both boxes of Jello until they are completely dissolved

- Pour the hot mixture (carefully) into the cold, bloomed gelatin mixture, and stir again until the gelatin is completely dissolved (this can take a couple minutes, depending how long you let it bloom)

- Pour the Jello mixture into each hollowed out watermelon half (add them to a baking dish for support to prevent spilling if needed). If you’re using lime halves, add them to a muffin tin for stability, or place cups on a cookie sheet to catch drips. A ladle or cup with a spout makes pouring into cups easier

- Cover (use plastic wrap or similar), and refrigerate until set, usually about 4 hours (though overnight is best, and times will vary between specific watermelon sizes), then place each half on a cutting board and use a sharp knife to slice the melons into approximately 1” thick strips, then 3-4 wedges (lime halves can be sliced 3 times lengthwise).
