I saw these cute upside down puff pastries on TikTok and fell in love. So, I added a summer fruit twist, figured out how to cook it in my air fryer, and that’s how this upside down peach puff pastry was created! These little pastries are an easy yet delicious dessert perfect for summer!

An upside down peach puff pastry is a dessert where peaches are placed on a sheet or parchment or a pan, topped with a layer of puff pastry, and then baked or air-fried until the pastry is golden and crisp.
It’s a recipe that went viral on TikTok, though originally it was made with other types of fruit. The good news is that this recipe is highly adaptable to any filling that you like!
Once cooked, the pastry is inverted or flipped upside down to reveal the caramelized peaches on top, creating a visually appealing and delicious treat.

The air fryer version allows for a quicker cooking process and results in a light, flaky pastry with juicy, sweet peaches that have a slightly caramelized texture.
This dessert is a similar concept to a tarte tatin, but uses puff pastry instead of a standard pie crust. Sometimes, these pastries are referred to as tarts or tartlets, but I associate that name with the small, round pastries filled with custard and fruit (but to each their own)!

Upside Down Peach Puff Pastry Ingredients

- 1 sheet puff pastry, defrosted if frozen
- 2-3 fresh peaches (depending on size)
- 2 Tbsp honey
- ½ tsp vanilla
- ½ tsp lemon juice
- Pinch of salt
- 1 large egg
- Powdered sugar for topping (optional)
Ingredient Tips and Substitutions
- You can use frozen or refrigerated puff pastry dough. I have the Pepperidge Farm frozen which are about 8-ounce sheets and cut them into 6 pieces. If you use a refrigerated like Jus Rol that’s 13 ounces, then opt to cut them into 8 or 10 pieces instead
- You’ll need around 6 slices of peach (cut about ¼” thick) per piece of dough, so vary the amount of peaches you grab accordingly based on your dough choice
- Instead of honey, you can also use hot honey for a spicy version, maple syrup, brown sugar, or olive oil for a savory version
- The vanilla can be swapped for almond extract if preferred (omit if you want a savory version)
- Feel free to add cheese between the peaches and pastry for a peaches and cream version. Ricotta, brie, cream cheese, or goat cheese are excellent choices
- Other seasonings you could add include basil, rosemary, thyme, mint, cinnamon, or ginger, so feel free to play around with flavor combinations!
How to Make Upside Down Peach Puff Pastry in the Air Fryer
- Cut a piece of parchment paper or nonstick foil to fit in your air fryer’s basket or rack
- Pit your peaches, then slice them into approximately ¼” thick slices (you can leave the skin on)

- Toss the peach slices in a bowl with the vanilla, lemon juice, and a pinch of salt and stir until well evenly coated

- Add six 1 tsp dollops of honey onto the parchment or foil, keeping them approximately 4” apart. If you need to cook in batches to fit everything in your air fryer, that’s completely fine. Just do a few at a time

- Over top of each dollop of honey, add 6 slices of peach, slightly overlapping

- Cut your puff pastry dough into 6 equal rectangular pieces using a sharp knife or pizza cutter. I go longways down the center of the dough, then make two vertical cuts. If you are using a different size piece of dough, adjust accordingly

- Lay a piece of puff pastry over top of each pile of peaches, then press the outside edges down using a fork to crimp them. Use the fork to also poke a few holes in the top for ventilation

- Beat your egg, then use a brush to egg wash the tops of the puff pastry dough

- Transfer the prepared tarts into your air fryer’s basket or rack. I just grab the edges of the paper or foil and set them in. You could also prepare these right in the basket if you find it easier, but I prefer more space to maneuver

- Cook on the air fry setting at 350°F for 10-12 minutes, until the pastry is browned and cooked through
- Remove from the air fryer, then carefully use a spatula to flip the tarts over. If any of the peaches fall out, just place them back in; no one will ever know!

- If the peaches aren’t as caramelized as you like, you can place them back in the air fryer face up for a few more minutes just to brown them further, but this is optional
- Finish with powdered sugar if desired, and enjoy!
