Ingredients Needed

ingredients to make strawberry ghosts
  • 12 strawberries, washed and dried well
  • 11-ounce bag white chocolate chips
  • 24 candy eyeballs
  • ¼ cup milk or dark chocolate chips

Ingredient Tips and Substitutions

  • You can use white candy melts, white chocolate bars (broken into pieces), almond bark, or another similar chocolate in place of white chocolate chips
  • If you don’t have candy eyeballs, you can just use some extra milk or dark chocolate (or mini chocolate chips) to add the eyes. Black icing works too, but will smudge if touched so I usually avoid it
  • The milk or dark chocolate chips are for drawing on the ghost “mouth” – you can use any color you want here; I just think the dark color shows up best against the white

Step By Step Instructions

  1. Line a baking sheet (or similar) with a piece of parchment paper or a silicone baking mat
  2. Add your white chocolate chips to a microwave-safe bowl. Cook on high for 1 minute, stir, and then cook in additional 15-second increments, stirring between each, until melted and smooth. If you use melting wafers, consult the packaging instead, as it often recommends 50% power

  1. Hold by the stem and then dip strawberries into the melted white chocolate (except for the part you’re holding). Do not allow the excess to drip off like you normally would. Instead, quickly move the dipped berry over to your lined baking sheet. Use the tip to draw a squiggle with the excess chocolate to create a ghost tail before laying the berry down flat. Then, add two candy eyeballs near the top while the chocolate is still wet (press gently so they adhere). Repeat until all berries are dipped

  1. Add your milk or dark chocolate to a microwave safe bowl, and melt on high in 30-second increments, stirring between each, until melted and smooth. Use toothpicks or a candy piping bag to draw on the ghost’s mouth below the eyeballs using the melted chocolate. If you didn’t use candy eyes, you can also pipe on eyes at the same time

Presentation and Plating Ideas

Presentation Suggestions

  • Graveyard Platter: Arrange your strawberry ghosts on crushed chocolate cookie “dirt” with gummy worms crawling around for a haunted graveyard vibe!
  • Eyeball Accents: Use candy or gummy eyeballs not just on the ghosts but scattered around the platter for an eerie effect
  • Foggy Display: Place dry ice in a bowl under your serving tray (handled safely) to create a spooky mist effect
  • Mini Coffins or Cauldrons: Serve each ghost in a Halloween-themed container like mini plastic coffins or cauldrons for individual treats
  • Black and Orange Accents: Use black platters with orange napkins or spiderweb doilies for a high-contrast, festive look

Plating Tips

  • Pair With a Halloween Drink: Serve strawberry ghosts alongside themed cocktails like a Halloween Sangria or a kid-friendly “witch’s brew” punch or Sonic Witch’s Brew Slush
  • Dessert Board: Include your ghosts on a Halloween dessert board with candy corn, chocolate truffles, mini cupcakes, and caramel popcorn
  • Themed Toothpick or Skewer: Stick each ghost with a bat- or skull-themed pick for easy grabbing at parties
  • Layered Jars: Nestle a strawberry ghost atop chocolate pudding “mud” in small mason jars, finished with crushed cookie crumbs. They also work great as a cake or cupcake topper!
  • Char-BOO-terie Boards: Add them to a spooky charcuterie board alongside sweet and salty snacks, Halloween cookies, and seasonal fruit! They pair well with my Ghost Pretzels

Recipe FAQs

Can You Freeze Strawberry Ghosts?

You can freeze strawberry ghosts, but it’s not ideal. Freezing may cause the chocolate to crack and the strawberries to become mushy once thawed.

Can You Use Frozen Strawberries Instead of Fresh?

It’s best to use fresh strawberries. Frozen ones release too much moisture when thawed, making it difficult for the chocolate to adhere properly and ruining the texture.

Why Doesn’t the Melted Chocolate Stick to the Strawberries?

If chocolate isn’t sticking, the strawberries are likely too wet. Make sure they’re completely dry before dipping—any water will prevent the chocolate from adhering.

Tips For the Best Strawberry Ghosts

  • I like to transfer my melted chocolate to a tall paper cup for easier dipping with fruit (since they’re tall and narrow it’s more convenient to coat the whole fruit). If your berries don’t have stems, you can stick a fork or straw through the top instead (this works well with a deep dipping vessel)
  • Try to work quickly to get the eyes on before the chocolate starts to set (or you can use a couple dots of fresh chocolate to adhere them on). If needed, you can reheat your chocolate (a 30-second increment is usually fine). If it gets too thick, add 1 tsp coconut oil to help loosen it back up

Storage and Make Ahead

  • Chocolate-covered strawberries are best enjoyed within 1–2 days. Store them in a single layer in an airtight container in the fridge for optimal freshness and texture
  • You can make chocolate strawberry ghosts up to one day in advance. Store in the fridge in a single layer on parchment. Try to avoid humidity to prevent condensation. Bring to room temperature (10-15 minutes) before serving for best results!
  • Ghost Brownies
  • Ghost Jello Shots

Final Thoughts

These chocolate covered strawberry ghosts are such an easy and delicious Halloween treat! They’re perfect for kids and adults with their whimsical yet spooky seasonal look.

I love that they’re a great, fruit-based alternative to pure Halloween candy (yet still sweet enough to be a special treat for the holiday)!

They only take a few ingredients, and are super easy to make – since it only takes a microwave, the kids can definitely help dip and decorate. I like to prepare them in the morning for an afternoon party for low stress entertaining.

Plus, they look great on a charcuterie board or dessert table for your Halloween party – crowd pleasing yet simple, my favorite!
