What is S’mores Bark?
S’mores bark is a fun, no-bake dessert that combines all the classic flavors of a s’more in an easy-to-make chocolate bark form!
It typically features layers of melted milk or dark chocolate, crushed graham crackers or Golden Grahams, mini marshmallows, and whatever extra decadent toppings you want to add!
Once it sets and hardens, simply break it into pieces for a sweet, crunchy treat that’s perfect for sharing or gifting. I find it far less messy than making actual s’mores over a fire, and this version is great for make ahead dessert prep!

Ingredients Needed

- 3 cups milk chocolate chips
- ½ cup white chocolate chips
- 1 cup Golden Grahams cereal
- ½ cup marshmallow fluff (creme)
- ¼ cup marshmallow bits (or ½ cup mini marshmallows)
Ingredient Tips and Substitutions
- You can also use dark chocolate or semi-sweet instead of milk chocolate. Feel free to substitute an equivalent amount of chopped bar chocolate instead of chips
- The Golden Grahams can be swapped for an equal amount of crushed graham crackers
- Feel free to omit the marshmallow fluff and just add extra marshmallows to the top
- While optional, you can add extra decor to the top of your bark like sea salt, seasonal colored sprinkles (for Valentine’s or Christmas), seasonal marshmallows, dried fruit, chopped nuts, toffee bits, or an extra drizzle of melted chocolate!
Step By Step Instructions
- Line a baking or cookie sheet with wax paper, parchment paper, or a silicone baking mat
- Add the milk chocolate chips to a microwave-safe bowl. Cook on high for 30 seconds, stir, and cook in additional 30-second increments, stirring between each, until chocolate is fully melted and smooth. Then, spread the chocolate out onto the lined baking sheet in an even layer (between ¼” and ½” thick is fine)

- In another bowl, melt the white chocolate chips, starting with 30 seconds and then moving to 15-second increments, until melted and smooth. Fold in the marshmallow fluff and stir until combined (it will be thick). Add the white chocolate mixture over top of the milk chocolate in dollops, then drag a butter knife back and forth to marble the two

- Top the bark with the Golden Grahams and marshmallow bits, gently pushing down so they adhere into the chocolate. Feel free to add other toppings or drizzles here as well

- Place the pan in the refrigerator for about an hour (or 30 minutes in the freezer) until the bark is set
- Break into pieces using your hands, a sharp knife, or a mallet, and enjoy!

Recipe FAQs
Is Chocolate Bark Real Chocolate?
Chocolate bark can be made with either real chocolate or chocolate-flavored candy coatings like almond bark.
When made with real chocolate, it contains cocoa butter and has a richer flavor, while candy coatings are easier to melt and work with but may have a slightly waxier texture.
What Does Bark Mean in Chocolate?
In the context of desserts, “bark” refers to a thin sheet of chocolate that’s broken into pieces, often topped or mixed with add-ins like nuts, candy, or marshmallows.
The name comes from its rough, jagged appearance, which resembles tree bark.
Who Popularized S’mores?
S’mores were popularized by the Girl Scouts of America, who published the first known recipe in a 1927 guidebook called Tramping and Trailing with the Girl Scouts.
The name “s’mores” is believed to be a contraction of “some more,” which makes perfect sense once you’ve tried one!
Tips For the Best S’mores Bark
- For best results, don’t spread your chocolate too thin – this will make your bark brittle. Make sure there aren’t any “see through” spots!
- If your chocolate seizes from overcooking, add a small amount of coconut oil (I do 1 tsp at a time) and reheat it for about 30 seconds, mixing well, until it smooths back out
- My microwave is 1000W. If yours is different, your cooking times may vary slightly, so adjust as needed!

Storage Tips
- Room Temperature: Store s’mores bark in an airtight container at room temperature for up to one week. Keep it in a cool, dry place away from direct sunlight to prevent melting or softening!
- Fridge: If your home is warm or humid, refrigerate the bark in a sealed container with parchment paper between layers to prevent sticking. It will stay fresh for up to 2 weeks this way
- Freezer: For longer storage, freeze the bark in a freezer-safe container or zip-top bag for up to 2 months. Let it come to room temperature before serving to restore the best texture
Final Thoughts
This simple s’mores bark is a classic campfire treat made into an easy to eat dessert! Each bite features the delicious combination of smooth chocolate, gooey marshmallow, and crunchy graham crackers for all the traditional flavors you crave.
It’s one of my favorite sweet treats to serve for dessert after a backyard barbecue in the summer (it’s less messy than the “real thing”). Plus, you can make it in advance for low stress entertaining!
S’mores aren’t just good for summer though – they’re also a welcome snack on cool fall nights, in packed lunches for school, and even for the winter and holiday season for a change up from traditional cookies.

If you’re feeling patriotic this summer, then you might also want to make my 4th of July Bark since the red, white, and blue colors are perfect for Independence Day, Memorial Day, and Labor Day!
