In all cases, cooking times can vary slightly by carrot size, so make sure you can piece them easily with a fork

- Place the carrots on a flat surface (like a cutting board or baking sheet) and use the bottom of a drinking glass or a measuring cup to smash them until they’re about ½” thick (or to your liking; the thinner they are, the crispier they get). Use a sheet of parchment paper if you like to prevent sticking!

- Mix the olive oil and the seasonings in a small bowl, then brush or spoon the mixture over top of the carrots
