Pumpkin deviled eggs are a creative fall twist on traditional deviled eggs, where the filling is made to resemble small pumpkins!

They’re a fun and festive appetizer, especially for fall-themed gatherings, Thanksgiving, or Halloween parties. Deviled eggs are also naturally gluten free and low carb, so they work for a variety of different dietary needs too!

I hard “boil” my eggs using the air fryer, as I find I can make more at a time than the stove, and they come out consistently great, easy to peel, and are very convenient to make.

Despite their name, pumpkin deviled eggs don’t actually contain any pumpkin. Instead, they are made using the same ingredients as classic deviled eggs, but the yolk filling is colored and shaped to resemble miniature pumpkins.

You can certainly use food coloring, but I prefer to just add the normal paprika I’d put on top of the eggs into the mix to create an orange hue that way! Add a snip of chives for the stem, and you’ve got a simple and delicious pumpkin deviled egg.

  • You can absolutely use your own favorite deviled egg filling recipe! This is my favorite, with a little extra mayonnaise added because I find it needs to be extra creamy to make the pumpkins look nice
  • Instead of yellow mustard, Dijon is a great substitute but you may need to add some yellow coloring to get it balance out
  • I use the paprika that I normally garnish with inside the filling to make the orange color. You can add some turmeric if you need more yellow (but I think the yolks and yellow mustard are enough). Alternatively, you can use red and yellow food coloring instead if you prefer!

How to Make Pumpkin Deviled Eggs

  1. Place your eggs directly onto the grate in your air fryer’s basket (or on the rack in an oven style) leaving air space between them. If you plan to boil your eggs instead, just cover the eggs in water in a pot, bring to a boil on the stove, turn off the heat and let sit until hard boiled, usually about 15 minutes

  1. Cook on the air fry setting at 250°F for 16 minutes. If your air fryer does not go that low, you can use 275°F-280°F for 15 minutes instead, or check other settings. For example, my Ninja Dual Zone has 270°F available on the ‘Reheat’ setting. Important note: Every air fryer varies and there will be some trial and error in getting them perfectly hard boiled. Make an extra test egg to check, until you’re confident in what you need for your particular air fryer
  2. Transfer the eggs to an ice bath or run under cold water until cool enough to handle, usually about 5 minutes. Use tongs or oven mitts to handle the eggs, as they will be hot

  1. Peel the eggs by tapping the base against a hard surface (like the side of the sink) until it cracks, then peel away the rest of the shell carefully with your fingers

  1. Slice the eggs in half lengthwise using a sharp knife, and then scoop out the yolks into a bowl using your fingers or a small spoon

  1. Add the other ingredients (except for the chives) in with the yolks, and then mash and mix well until smooth. Taste and adjust seasonings to your preference as needed. You can use a small food processor for this as well if you have one
  2. Spoon or pipe the filling back into the egg whites, dividing evenly (it should be slightly mounded, but not too tall)
