Ingredients Needed

- 3 cups white chocolate chips
- 1 tsp green apple extract, divided
- 14-ounce can sweetened condensed milk
- Neon green food coloring
- Black gel food coloring
- Pinch of salt
Ingredient Tips and Substitutions
- You can also use some dark or milk chocolate instead of half of the white chocolate (for the portion you tint black). You really need the white chocolate for the green portion though to get a good color
- I use the green apple extract because that’s the theme of the fudge! However, you can swap in vanilla or another flavored extract if you prefer
Step By Step Instructions
- Line an 8×8” or 9×9” square pan with parchment paper
- Add 1 ½ cup of the white chocolate chips and half the can of sweetened condensed milk to a microwave-safe bowl

- Cook on high for 1 minute, stir, and then cook in additional 30-second increments, stirring after each, until the mixture is fully melted and smooth and slightly thickened

- Stir in ½ tsp of green apple extract, a pinch of salt, and enough neon green food coloring to give you a vibrant green color (this can vary between brands of coloring; I use 10 drops)

- Pour the fudge mixture into your prepared baking dish. I do not smooth the top because I like it to be a little uneven, but it should be distributed fully across the base of the dish

- Now, add the remaining 1 ½ cups chocolate and half can of sweetened condensed milk to a different microwave safe bowl, and repeat the melting process. This time, stir in the remaining ½ tsp green apple extract, a pinch of salt, and black food coloring (I use ¾ tsp but this can also vary by brand)

- Pour this mixture on top of the green layer in your baking dish, and smooth the top. Feel free to add in some Halloween sprinkles here if you like!

- Place in the refrigerator until set (about 3-4 hours), then remove from the pan and cut into 1” or 2” square pieces as desired. Enjoy!

Recipe FAQs
What Is The Secret To Good Fudge?
The secret to good fudge, especially microwave fudge, is all about balance and precision. Use high-quality chocolate, sweetened condensed milk, and precise timing. Overheating can cause it to seize or become grainy, while underheating may prevent it from setting.
Stirring the mixture until smooth and working quickly before it sets helps ensure a glossy, creamy texture. For poison apple fudge, using a gel-based food coloring also enhances the dramatic Halloween effect without affecting consistency!
Can I Make This Recipe Without A Microwave?
Yes, you can absolutely make this fudge without a microwave! Instead, use the stovetop method: combine your chocolate and sweetened condensed milk in a saucepan over low heat, stirring constantly until melted and smooth.
Be careful not to overheat it, as chocolate can scorch easily. Once melted, follow the same steps as you would with the microwave version, adding the color, flavoring, and spooky mix-ins if desired before pouring it into a prepared pan.
Why Did My Fudge Get Too Hard?
Fudge that turns out too hard is often the result of overcooking or overheating the mixture. In the microwave, even an extra 30 seconds can make a big difference. Make sure you microwave in short bursts (usually 30 seconds at a time), stirring in between.
Using too much chocolate or not enough sweetened condensed milk can also make it overly firm. If your microwave runs hot, reduce the cook time slightly or use a lower power setting.
Tips For the Best Poison Apple Fudge
- You can also split the two colors and alternate the layers to create stripes if you like. However, you need to work relatively quickly to ensure they don’t start to set up too quickly (which is why I prefer to just do two layers)
- Cooking times can vary between microwave wattages and based on bowl size. I cooked each of my layers for 1 ½ minutes total in a 1000W microwave. Adjust as needed for your specific setup

Storage Tips
- Store cut squares of fudge in an airtight container in the refrigerator for 2-3 weeks. Add parchment or wax paper between layers to prevent sticking and color bleed. It’s also fine at room temperature for a week or so, as long as you have a cool dry place to store it
- For longer term storage, you can freeze your fudge. Wrap individual pieces in plastic wrap or parchment paper, place in a freezer-safe bag or container, and store for up to 3 months. Thaw in the fridge overnight or on the counter for a few hours
Final Thoughts
This poison apple fudge is a fun layered neon green and black fudge that’s perfect for Halloween! It’s also great for movie night, as it’s a play on Snow White that fits in with fairy tales, enchanted forests, and other similar themes too.
I love to serve this fudge for Halloween parties, though. It’s eye-catching, and delicious with the green apple fruit flavor. Plus, you can easily make it in advance, it serves a crowd, and is ideal for low stress entertaining. It looks great on a dessert table or Halloween charcuterie board too!
