When it’s summertime and hot outside, the last thing you probably want to do is turn on the oven to bake a cake. So, instead, I make this peach blackberry cake in my air fryer! It’s a great way to use fresh summer fruit without having to heat up the house, for a delicious dessert.

What is a Peach Blackberry Cake?
Well, much like the name implies, a peach blackberry cake is a traditional vanilla cake base with fresh peaches and blackberries added into the mix.
You can dice or slice the fruit and fold it directly into the batter, or you can add it to the bottom of the pan before adding the cake on top to create an upside down cake with an elegant design.
Of course, you can definitely bake this cake in the traditional fashion in your oven. However, when the heat of the summer is in full swing is also when peaches are most ripe. So, baking in the air fryer allows for an alternative method that won’t heat up the house.

There are many different sizes and styles of air fryer. Some, you can bake the cake in a full sized pan just like you would your oven. I have a Dual Zone air fryer with two smaller rectangular baskets so that isn’t possible. Instead, I create several mini cakes instead!

Peach Blackberry Cake Ingredients

- 1 ½ cups all purpose flour
- 1 tsp salt
- 1 ½ tsp baking powder
- ½ cup butter, softened
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- ¼ cup Greek yogurt (I use peach flavor)
- 1 cup blackberries
- 1 cup sliced peaches (peeled)
Ingredient Tips and Substitutions
- Feel free to sub almond extract instead of vanilla
- The Greek yogurt can be swapped for sour cream if preferred. I like using peach flavor yogurt, but blackberry, lemon, or plain are other good options
- Frozen fruit is fine, but make sure to defrost and drain well before using
- If your blackberries are very large, cut them into halves or even quarters to make mixing easier
- Toppings for serving are optional, but you can use powdered sugar, whipped cream, or ice cream, if desired

You’ll need some form of oven safe cake pan(s) that fit in your air fryer’s basket or rack. A single 9” cake pan is fine, or you can use 4 ramekins, or 2-3 smaller cake pans depending on size. I use two 4” diameter cake pans given the size of my air fryer’s baskets
How to Make Peach Blackberry Cake in the Air Fryer
- Grease your cake pan (or other dishes) well. If you want to do an upside down cake, line the bottom with parchment as well
- Cream together the butter and sugar. Then, add the eggs, vanilla, and yogurt, mixing well. Finally, add the dry ingredients (flour, salt, baking powder) and stir until just combined

- Fold in the blackberries and peaches. Note: if you plan to do an upside down cake, slice the peaches and lay them in the bottom of the cake pan instead

- Spoon the batter into your cake pan(s) in an even layer, then place into your air fryer’s basket or rack

- Cook on the air fry setting at 325°F for 20-30 minutes, or until a toothpick inserted into the center comes out clean. Times can vary between individual air fryers, as well as based on the size (particularly the thickness) of your pan(s)
- Cool for 5-10 minutes before running a spatula or knife around the outside of the cake to release it, then invert onto a plate
- Serve with a topping of powdered sugar, whipped cream, or ice cream, if desired. Enjoy!

- Your cooking times will vary in the air fryer significantly based on the size of your pans, mostly the thickness. When I use my 4” round cake pans that are 2” thick, the cooking time is about 35 minutes. My 4” squares which are only 1” thick are ready in 20 minutes (both are aluminum)
- Depending on the size pans you use, you may have some extra batter. Feel free to pop it in a ramekin or two for some extra mini cakes!
- It’s normal for the cakes to dome in the center during cooking (the edges cook before the middle even more in the air fryer compared to an oven). If you are making an upside down cake, you may need to trim the excess dome before inverting so that your cake sits flat. Use a serrated knife (like a bread knife) for best results
