What is Mummy Meatloaf?

Mummy meatloaf is a fun, Halloween-themed take on classic meatloaf, where the dish is wrapped or decorated to resemble a spooky mummy.

The meatloaf itself is shaped into a loaf (or individual mini loaves), then “wrapped” with strips of puff pastry, crescent roll dough, or even mashed potatoes to create a mummy-like appearance!

While this Halloween mummy meatloaf recipe is easy to bake in the oven, I make mine in the air fryer since it’s faster and just as convenient. Plus, that leaves the oven open for roasting a side dish, or even making a fun Halloween dessert!

For the finishing touch, ketchup, olive slices, candy eyes, or cheese circles are used to make the mummy’s eyes. It’s a festive and kid-friendly dinner that’s perfect for Halloween parties or spooky-themed meals!

Ingredients List

ingredients to make mummy meatloaf
  • 1 pound ground beef (80/20 or 85/15 is best)
  • ¼ cup minced onion (white or yellow)
  • 1 tsp minced garlic
  • ½ cup Italian breadcrumbs
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper (or to taste)
  • 1 Tbsp Worcerstershire sauce
  • 1 Tbsp brown sugar (or to taste)
  • ¼ cup ketchup
  • 2 large eggs, beaten
  • 1 tube refrigerated crescent dough sheet
  • Extra ketchup, 2 candy eyes, or 2 olive slices for “eyes” (or more if you make more than one loaf)

Ingredient Tips and Substitutions

  • You can substitute ground turkey or ground chicken instead of the ground beef, or use a mix of beef and sausage, pork, or veal if desired
  • Instead of bread crumbs, you can substitute panko, quick oats, or cracker crumbs
  • The crescent dough can be swapped for puff pastry if preferred. You can also substitute mashed potatoes and a piping bag with a wide, flat tip and pipe on the “bandages” that way – it’s a great gluten free option and easier to do if you’re making meatloaf cupcakes/muffins instead of one large loaf

Variations

  • For a zombie variation, substitute slices of bacon instead of the dough (to look more like flesh), adding them when there is about 12-15 minutes left in cooking
  • To make a stuffed meatloaf variation, add around 4 ounces of shredded or sliced cheddar or American cheese into the center of the loaf when forming it

Step By Step Instructions

  1. In a large bowl, combine all ingredients except the crescent dough and eyeballs. Mix until everything is well distributed, but don’t overmix for best texture

  1. Form the meat mixture into a mummy loaf shape (wider at the top, taper at the bottom) that’s about 3” thick (it doesn’t need to be exact, but make sure you shape it so it actually fits in your air fryer’s basket!). Place it on top of some nonstick foil or parchment paper. I like to make sure it comes up the sides enough to grab it, which makes transfer easier later since you can lift the loaf out by the edges of the foil

  1. Place in your air fryer’s basket or rack, then cook on the air fry setting at 350°F for 20 minutes

  1. While the meatloaf is cooking, roll out your crescent dough (pinch the seams closed if you have the perforated type) and cut into about 8 1” wide strips lengthwise, and then across the middle in the center with a pizza cutter or sharp knife (you should have 16 strips total)
roll out crescent dough and cut into even strips
  1. Get a new sheet of foil and lay the strips out on it in a criss cross pattern overlapping to mimic the shape of your mummy

  1. Remove the meatloaf from the air fryer, and use a spatula to transfer it over top of the dough strips (this is also a great time to flip your meatloaf over to ensure more even cooking). Then, stretch and cross the dough strips over it to look like bandages (tuck the loose ends back under the meatloaf). Leave about ½” strip open near the top of the loaf (to add eyes there later)
transfer partially cooked meatloaf on top of crescent dough and wrap strips as bandages around the mummy
  1. Add the now-wrapped loaf back to the air fryer (on the new sheet of foil) and cook for an additional 12-15 minutes at 350°F, or until the dough is golden brown and cooked through, and the internal temperature reaches at least 160°F. The edges and bottom of the dough will not get super brown because of the foil, but they should still be cooked through
  2. Rest for at least 5 minutes, then add the candy eyes (or dots of ketchup, mustard, or sliced green or black olives) and serve with your favorite sides!

Alternate Oven Directions

  1. Place loaf on a parchment or foil-lined baking sheet
  2. Bake in an oven preheated to 350°F for 25 minutes
  3. Add the dough strip “bandages” and bake an additional 15-20 minutes, until dough is browned and center of loaf reaches 160°F
  4. Rest at least 5 minutes before serving

Recipe FAQs

What Is the Secret to a Great Meatloaf?

The key to a great meatloaf is a balance of moisture, seasoning, and texture. Using a mix of ground meats (such as beef, pork, or veal) adds depth of flavor, while breadcrumbs or oats act as a binder.

Keeping the meatloaf moist with eggs, milk, or broth prevents it from drying out. Proper seasoning, including salt, pepper, Worcestershire sauce, and herbs, enhances the taste. Finally, avoid over-mixing the meat, as this can lead to a dense and tough texture.

What Ingredient Keeps Meatloaf from Falling Apart?

The binders in meatloaf, such as eggs and breadcrumbs, help hold everything together. Eggs provide structure by coagulating as they cook, while breadcrumbs, crushed crackers, or oats absorb excess moisture and create a firm texture.

If your meatloaf tends to fall apart, try increasing the number of eggs or adding more binding ingredients.

What Happens If You Add an Extra Egg to Meatloaf?

Adding an extra egg can make the meatloaf softer and more tender, as eggs contribute moisture and help bind the ingredients together.

However, too many eggs may result in a looser texture, making it harder to slice cleanly.

Should You Bake Meatloaf Covered or Uncovered?

Meatloaf is typically baked uncovered to allow the top to develop a nice crust and caramelization, especially if using a glaze.

However, if the meatloaf starts to brown too quickly, you can loosely cover it with foil for the first half of the baking time and remove it toward the end for a golden, crispy exterior. Covering it can also help retain moisture if your oven tends to dry out food.

Tips For the Best Mummy Meatloaf

  • You can also easily make this recipe into personal-sized mini meatloaves or appetizers like meatloaf cups. See my other meatloaf recipes below for tailored cooking instructions
  • This recipe will put off some grease as it cooks. In the air fryer, I recommend tipping out the drip tray or basket when you are adding the dough, to prevent smoking
  • I made this recipe in my Ninja air fryer. Cooking times can vary between air fryers, and based on the specific size and thickness of your loaf. I cooked mine (without preheating) for a total of 35 minutes and it was perfect, but you can adjust as needed for your specific model

Storage and Reheating Tips

  • Store leftovers in an airtight container or wrap it tightly in plastic wrap or foil. It will stay fresh for 3–4 days in the refrigerator
  • For longer term storage, wrap the entire cooked meatloaf (or individual slices) in plastic wrap and then aluminum foil. Freeze in an airtight freezer bag or container for up to 3 months
  • To reheat your meatloaf, bake at 325°F for 20–25 minutes (or until heated through), or air fry at 350°F for 5–7 minutes, flipping halfway through if reheating slices.
  • For a meatloaf sandwich preparation, heat a skillet over medium-low heat, add a little butter or oil, and cook slices for 2–3 minutes per side until warmed through!
