Ingredients List

- 3 ears fresh sweet corn, shucked and silk removed
- 1 Tbsp melted butter (or olive oil)
- Salt and black pepper to taste (I use ⅛ tsp of each)
- ⅛ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese (or queso fresco)
- 1 Tbsp fresh lime juice
- 1 Tbsp chopped fresh cilantro (plus additional for garnish)
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp chili powder or Tajin (or to taste)
- Tortilla chips (or similar) for serving
Ingredient Tips and Substitutions
- You can also use frozen (defrosted) corn, or even canned corn when fresh sweet corn is not in season (about 1 ½ – 2 cups in total)
- Instead of mayo, you can substitute Greek yogurt if preferred. The sour cream can be swapped (or split with) softened cream cheese if you like
- If you can’t find Cotija cheese, queso fresco is a good alternative. You can also use parmesan, or even feta cheese as other options depending what your grocery store has!
- Besides tortilla chips, other good dipper options include corn chips (like Fritos), potato chips, sliced bell peppers, or similar
- For a cheesy topper, sprinkle some shredded cheddar or pepper jack cheese over top of your dip before baking it (but this is very much optional)!
- Adjust the spice mix to your personal tastes (including omission). Cumin is another popular choice, or you can add some cayenne pepper or chopped jalapenos for some spicy flavor if you like!
Step By Step Instructions
- Combine the melted butter, salt, and pepper in a small bowl. Brush or rub it evenly over your sweet corn ears

- Place the corn into your air fryer’s basket in a single layer. Cook on the air fry setting at 375°F (or 380°F, depending on available settings) for 10 minutes, then flip the ears, and cook another 5-8 minutes, until the kernels are browned to your liking. Skip this step if you’re using frozen or canned corn instead of fresh corn

- Remove the corn from the air fryer, and use a sharp knife to cut the kernels off the cob (use a paper towel, tongs, or oven mitt to hold the top, as it will be hot)

- Combine the kernels with the remaining ingredients, except the chili powder, and mix until well combined. Taste test here and adjust your seasoning (salt and pepper) levels as needed

- If you want to heat the dip further, spread it evenly into an oven-safe baking dish that fits in your air fryer. Cook on the air fry setting at 400°F for 3-5 minutes, until warmed through and the top is browned to your liking. This step is entirely optional, just depending how warm you like your dip

- Sprinkle the chili powder over the top. Add extra Cotija cheese, cilantro, or jalapeno slices to garnish (all optional), and serve with tortilla chips or your favorite dippers. Enjoy!

Recipe FAQs
Can I Make This Recipe In The Crockpot Instead?
Yes! Combine the ingredients in a slow cooker and cook on low for 2–3 hours or until the cheeses are melted and the dip is hot. Stir well and add any fresh garnishes just before serving.
Should Mexican Street Corn Dip Be Served Hot Or Cold?
Street corn dip is best served warm while the cheese is melted and creamy. It can also be enjoyed chilled or at room temperature, but generally the flavors and texture are at their best when it’s freshly warmed.
What’s The Secret To The Best Street Corn Dip?
The best street corn dip balances sweet corn with creamy cheese, tangy lime juice, salty cotija, and a touch of chili powder. Using freshly cooked or lightly charred corn and finishing with fresh cilantro and a squeeze of fresh lime gives the dip its signature bold flavor.
Tips For the Best Mexican Street Corn Dip
- I make my corn in a Ninja Dual Zone air fryer. Other models can vary slightly in terms of cooking time needed, so adjust accordingly. It’s fine to add a few extra minutes for browner corn as well, as it’s pretty forgiving with still staying juicy
- You can grill your corn instead for deeper char if preferred!
- If you are heating the dip in the air fryer, just remember that any dish that is oven safe is air fryer safe. I use a couple shallow oval dishes (since I have two baskets) to heat mine up, but you can use one casserole dish, baking dish, or similar in a single basket unit

Storage and Reheating
Storage Tips
- Let the dip cool completely before transferring it to a storage container
- Store leftovers in an airtight container in the fridge for up to 4 days
- Give the dip a good stir before reheating, as some separation is normal
- Freezing isn’t recommended, as the creamy ingredients become grainy after thawing
Reheating Tips
- Air fryer: Transfer the dip to an oven safe dish that fits in your air fryer, and reheat at 325°F for 5-7 minutes, stirring halfway through
- Oven: Bake at 350°F for 10-15 minutes until hot and bubbly
- Microwave: Heat in 30-second intervals, stirring between each, until warmed through
- If the dip thickens, stir in a splash of milk or cream to restore its creamy consistency
- Refresh before serving with extra cotija cheese, cilantro, chili powder, and a squeeze of fresh lime!
Make Ahead
If you’re making this dip ahead for a party, cook the corn and mix the dip a day in advance and refrigerate it. Reheat just before serving, then add the fresh toppings at the end for the best flavor, texture, and presentation!

Final Thoughts
This Mexican street corn is one of my favorite easy dips for game day, Cinco de Mayo, or just a backyard cookout in the summer! I serve mine with tortilla chips, but corn chips and veggies are wonderful too, for a nice variety of options (and it’s naturally gluten free so long as you watch the dippers)!
Your air fryer adds a great roasted flavor profile to fresh sweet corn, which melds beautifully with creamy mayonnaise and sour cream, along with bright lime, cilantro, and spices. Spoon it out with a crunchy chip and let the flavors explode!
