The homemade marinade infuses the classic hot dog with a bit of bbq flavor, seasonings, and sauces—like soy, barbecue, garlic, or spicy blends—giving you a more complex, gourmet result compared to plain boiled or grilled dogs.
It also slightly tenderizes the outer layer and helps caramelize the surface when cooked, especially on a grill or in an air fryer, leading to richer flavor and a more appealing texture.

Ingredients Needed

- 1 package hot dogs (Usually 6-8 dogs depending on brand)
- ½ cup chili sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 Tbsp Worcestershire sauce
- 1 Tbsp low sodium soy sauce
- 1 Tbsp yellow mustard (or Dijon)
- 2 Tbsp brown sugar
- 1 Tbsp apple cider vinegar
- ½ tsp black pepper (or to taste)
- Hot dog buns (optional)
Ingredient Tips and Substitutions
- Any type of skinless hot dog is great! I use all beef franks, but you can use a mix, or even substitute turkey or veggie dogs, or other good hot dogs here
- Feel free to adjust any seasonings to your personal tastes (use your favorite spice blend or smokehouse rub), and make swaps as desired (just make sure to choose a salt-free seasoning blend since hot dogs are already salty). For a less sweet marinade, use white vinegar instead of ACV, and only 1 Tbsp brown sugar
- Chili sauce is not the same as sweet chili sauce (a sweet Thai condiment) or coney sauce (which contains meat). Actual chili sauce is a ketchup-based condiment, usually found near ketchup or cocktail sauces at the store
Step By Step Instructions
- Use a sharp knife to cut small slits at an angle about ½” apart and no more than ⅓ of the way partway through the hot dog. I usually do it on two sides of the hot dogs (also known as fish scale cuts; they should look like half circles), but you could do 3 or all 4 if you wanted. If you have a hot dog scoring tool, you can use that here as well as an alternative option

- Combine all the other ingredients (except the buns) in a zippered bag or small bowl, mixing well, and then add the cut hot dogs so that they’re submerged in liquid

- Let the hot dogs marinate for at least 30 minutes, and up to overnight (the flavor gets better the longer it sits, but sometimes we’re in a hurry)!
- Place the marinated hot dogs into your air fryer’s basket in a single layer, with air space between each one

- Air fry at 400°F for 7-9 minutes, pausing halfway through to flip the dogs over, or until the cuts have opened up and the edges are browned to your liking
- Add to buns if desired, and serve with your favorite condiments and sides!

- Freezing: You can freeze uncooked or cooked marinated hot dogs in a freezer-safe bag for up to 2 months. Just be sure to label with the date and contents!

- Microwave: Wrap in a damp paper towel and microwave on medium power for 30–45 seconds
