- You can omit the onion if preferred, or add/swap it for bell peppers, scallions, or even black or refried beans
- Additional toppings are very much up to you! Try shredded fiesta cheese, pico de gallo, pickled jalapenos, hot sauce, sour cream, a squeeze of fresh lime juice, or even a couple pierogies!

- Cut your kielbasa into lengths that fit the size of your taco shells, then slice each one lengthwise. In a medium bowl, toss onion slices in the olive oil, plus salt and pepper to taste
- Place the onions into your air fryer’s basket or rack in a single layer, then add the sliced kielbasa segments on top of them (I prefer cut side facing up for better browning). Cook on the air fry setting at 375°F (or the closest setting your air fryer has) for 8-10 minutes, until the sausages are browned to your liking and the onions are tender. If the sausage starts to over-brown but the onions need more time, flip the sausages over and continue cooking as needed

- Toss the shredded cabbage with the apple cider vinegar, plus salt and pepper to taste. If you are using sauerkraut, no need to add any vinegar, just drain it well
