- Regular or turkey kielbasa is fine, or you can substitute smoked sausage or similar if desired!
- Any bell peppers or onion variety will work fine, so you can adjust for preferences or what you have on hand (you can add other similarly sized vegetables such as zucchini, corn, etc as desired too)
- If you want to use fresh potatoes, peel and dice them into ½” cubes – you want 3 ½ to 4 cups or so. Russets and sweet potatoes are a great option. Note that fresh potatoes require about 5 extra minutes of cooking to compensate. You can also use frozen hash browns, but I usually pre-cook them 2-3 minutes to get rid of the extra moisture
- All seasonings are adjustable to taste. Try cayenne or Cajun seasoning for some heat, paprika or onion powder, parsley, or oregano for some herby flavors, or you can even add some scallions or some shredded cheddar cheese on top for a cheesy variation!

- Add all ingredients to a large mixing bowl and stir until everything is well coated. If you want to avoid dirtying another bowl, you can stir everything around in the air fryer, but I find things fall through the grates

- Pour the mixture into your air fryer basket in a relatively even layer. Don’t go too deep, no more than an inch, or things won’t cook evenly. For smaller air fryers, cook in batches or halve the recipe

- Cook on the air fry setting at 400°F for 20-25 minutes, stirring every 5 minutes, until potatoes are fork tender and kielbasa is golden brown to your liking. If you are using fully raw potatoes, pre cook them for 5-10 minutes so they start to soften before you add the other ingredients and cook as directed
