Ingredients List

- 14 ounces kielbasa sausage
- ½ cup diced onion (yellow or sweet)
- 2 cups hash browns (defrost if frozen)
- ½ tsp black pepper (or to taste)
- ½ tsp garlic powder (or to taste)
- 1 tsp dried parsley (or to taste)
- 1 Tbsp salt-free Cajun seasoning (optional)
- 10.5-ounce can condensed cream of chicken or cream of cheddar
- ¼ cup sour cream
- 2 cups shredded cheddar cheese (or similar)
Ingredient Tips and Substitutions
- Regular or turkey kielbasa is fine (you can also substitute a similar smoked sausage)
- In addition to (or instead of) onion, you can use diced bell peppers, shredded cabbage or sauerkraut, or even some green beans
- I use Simply Potatoes hash browns because they’re pre-cooked slightly and make life easier. You can also use diced (they make take slightly longer to cook) or even fresh potatoes (but you’ll need to pre-cook them for 7-10 minutes to get them tender)
- All seasonings are adjustable to taste, including omission. Kielbasa is pretty salty, as is the soup base, so you definitely don’t need to add any (and feel free to thin the soup with extra sour cream or some milk if desired)
- Instead of sour cream, you can use Greek yogurt or milk if preferred
- Other good cheese options include Colby Jack or Swiss
Equipment Notes
You’ll need an oven-safe baking dish that fits in your air fryer to make this recipe. I have a Dual Zone air fryer with two baskets, so I split this casserole into two smaller oval casserole dishes.
If you have a single basket unit, you can just use a single regular round or square casserole dish that fits. If it’s oven-safe, it’s air fryer safe!
Step By Step Instructions
- Grease your casserole dish(es) with nonstick spray (or similar)
- Dice the kielbasa (cut into ½” thick medallions, then quarter each one), and add it to a mixing bowl along with the hash browns, onions, soup, sour cream, seasonings, and half the shredded cheese. Stir well to combine

- Spread the mixture evenly into your casserole dish(es) and then place into your air fryer

- Cook on the air fry setting at 350°F for 20-30 minutes, stirring every 10 minutes, until golden brown, bubbling, and potatoes are fully cooked through
- Add the remaining 1 cup of shredded cheddar cheese evenly over the top, then cook for an additional 3-4 minutes, until melted and browned to your liking

- Serve hot, with your favorite sides or toppings!

Recipe FAQs
Is Kielbasa Precooked?
Most kielbasa sold in grocery stores is fully cooked and just needs to be heated through before eating. However, some varieties are sold fresh and uncooked, so it’s always a good idea to check the packaging instructions before cooking.
Can I Make This In The Oven Instead?
Yes! You can bake kielbasa casserole in a traditional oven until hot and bubbly, usually 60-90 minutes at 350°F, depending on the size of your pan and potatoes. If your recipe includes cheese on top, baking will help create a golden, melty finish similar to the air fryer version.
What Pairs Well With Kielbasa?
Kielbasa pairs well with potatoes, cabbage, peppers, onions, sauerkraut, green beans, mac and cheese, and fresh salads. Tangy, slightly sweet, or smoky flavors work especially well alongside the savory sausage.
Tips For the Best Kielbasa Casserole
- Stirring is important to keep the casserole from over-browning on top (the air fryer is more zealous than a traditional oven in that regard)!
- I did not preheat my air fryer and my casserole was cooked perfectly in 25 minutes. Times can vary between air fryers, and based on the size and depth of your dish, and the size and type of potatoes used, so adjust as needed for your specific setup
- To retrieve the casserole dish from the air fryer, I use a flat spatula to lift it out, or just grab it with oven mitts on (sometimes that feels like the trickiest part)!

Storage and Reheating
Storage Tips
- Let the casserole cool slightly first. This helps prevent excess condensation in the container
- Store in an airtight container. Keeps the casserole fresh and prevents it from drying out. Leftovers will keep well in the fridge for up to 3-4 days
- Freeze for longer storage. Store in freezer-safe containers for up to 2 months. Thaw overnight in the refrigerator before reheating
Reheating Tips
- Air fryer (best texture). Reheat on a piece of foil or in an oven-safe dish at 350°F for 4-6 minutes until hot and bubbly
- Oven method. Warm at 350°F for 15-20 minutes, covering loosely if needed to prevent over-browning
- Microwave (quickest option). Heat in short intervals, stirring or rotating as needed for even heating (though you will lose crispiness on the sausage)
- Add extra cheese if desired. A little fresh cheese on top helps refresh leftovers beautifully!
- Kielbasa and Beans
Final Thoughts
Air fryer kielbasa casserole is creamy, hearty, and comfort food to the max! It’s packed with savory sausage, potatoes, creamy cheese, and your favorite blend of seasonings (which are super customizable to taste).
It’s a great dish when you want something cozy, but without heating up the kitchen too much. The air fryer hits the right spot, cooking your casserole in less time than the oven, while still delivering perfectly caramelized sausage and a bubbly filling!
