- Cut the potatoes into approximately ¾” to 1” cubes, then toss in a bowl with the olive oil and all of the seasonings until well mixed

- Spread the potatoes in your air fryer’s basket in a single layer (a small amount of overlap is alright, but if it’s too deep the potatoes won’t roast evenly)

- Cook on the air fry setting at 400°F for 10-15 minutes, until the potatoes start to soften (you should be able to stick a fork in them without them breaking apart, but still some resistance)
- While the potatoes are cooking, cut the kielbasa into ½” thick medallions, and dice or slice the onions into approximately ½” thick pieces. After the potatoes have cooked for 10-15 minutes, shake the basket, then add the kielbasa and onions on top

- Cook on the air fry setting at 400°F for an additional 12-15 minutes, stirring halfway through, until the potatoes and onions are tender, and the kielbasa is browned to your liking. Add extra cooking time in 1-2 minute increments as needed for your preferences. Enjoy!
