- 14 ounce package kielbasa sausage
- 2 Tbsp Dijon mustard
- 2 Tbsp light brown sugar
- 1 Tbsp apple cider vinegar
- ½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp black pepper (or to taste)
Ingredient Tips and Substitutions
- I prefer skinless kielbasa as I find cutting it to be easier. You can substitute turkey kielbasa if preferred
- Instead of Dijon mustard, you can use yellow, spicy brown, or a similar mustard. BBQ sauce is a great alternative!
- The brown sugar can be swapped for maple syrup or honey instead if preferred (and dark brown sugar will work fine as well)
- All seasonings are adjustable to taste, including omission. Other great options include thyme, parsley, onion powder, or similar! You can add some Kosher salt to taste if desired, but I don’t find it necessary
Step By Step Instructions
- Slice your kielbasa sausages into approximately 1” bite sized pieces (or you can leave them whole for a dinner option). Then, cut ¼” wide slices into each segment (about 2-4 slices depending exactly how large your pieces are), only cutting about two thirds of the way through (use chopsticks, skewers, or the handles of a wooden spoon on each side to serve as a stopper to prevent accidentally cutting through)

- Add your scored sausage pieces to a large bowl and combine with the mustard, brown sugar, vinegar, and all the seasonings, tossing until evenly coated

- Place the hasselback kielbasa into your air fryer’s basket or rack in a single layer, allowing air space between each piece

- Cook on the air fry setting at 375°F for 8-10 minutes, until the kielbasa is browned to your liking and the glaze is caramelized
- Serve hot with toothpicks as an appetizer, or pair with your favorite sides for a full meal!

Yes! Roast the kielbasa on a baking pan in a preheated oven at 400°F for about 20-25 minutes, or until heated through and slightly crisp. Brush with glaze partway through and again at the end over the top and sides of the kielbasa for the best flavor and caramelization.

Yes, you can! Carefully slice along the outer curve of the ring, making evenly spaced cuts without cutting all the way through. It may take a little more patience, but it works well and makes for a great presentation.
Tips For the Best Hasselback Kielbasa
- For best flavor, make sure to get the seasoning into the slices on each piece of sausage. You can gently part them and massage it in with your hands, or reserve and brush more sauce on after they’ve cooked for about 5 minutes, as they start to open up
- I find it’s easiest (albeit messy) to use my hands to season the sausage. You could also use a basting brush if you find that easier or less messy!
- As pictured, I cooked my hasselback kielbasa bites for 10 minutes total in a Ninja Dual Zone air fryer. Other air fryer brands and models may vary slightly (along with personal preferences), so adjust cooking time as needed for your specific setup!

- Cool before storing. Let the kielbasa cool slightly so it doesn’t create excess moisture in the container. Leftovers will keep well for 3-4 days
- Store in an airtight container. Helps preserve flavor and keeps the glaze from drying out!
- Freeze if needed. Wrap tightly and freeze for up to 2 months. Thaw in the fridge before reheating

- Air fryer (best option). Reheat at 350°F for 3-5 minutes to bring back those crispy edges!
- Oven method. Warm at 350°F for 10-12 minutes until heated through
- Skillet method. Heat over medium, turning occasionally to re-crisp the edges
- Microwave (quickest). Heat in short intervals, but note it will soften the texture
