Ingredients List

- 35 saltine crackers (about one sleeve)
- ½ cup salted butter (1 stick)
- 1 cup brown sugar (light or dark)
- 2 Tbsp water
- 10 ounces black candy melts (or semisweet/dark chocolate chips)

- Regular or wheat saltines are both fine! This recipe is also easy to double, so feel free to use more
- You can add ½ tsp vanilla extract to the toffee for flavor if you like, but I don’t find it necessary with all the decorations
- Feel free to experiment with other colors of candy melts if you like – orange, green, or purple would also work great for Halloween!
Equipment Notes
I make my saltine toffee crack using the microwave, so you don’t need a stove or an oven for this recipe. However, to do this, you’ll need a microwave-safe bowl that can withstand boiling sugar (about 300°F) so do not use a plastic container.
For mine, I chose a casserole dish that’s both oven and microwave safe, since anything that can withstand oven temperatures should be fine. Make sure to check manufacturer guidelines for your specific dish though!
Step By Step Instructions
- Line a baking sheet or pan with nonstick aluminum foil or parchment (you want to be able to fit all your crackers on it)
- Arrange the crackers side by side so that they fill up the base of your baking sheet

- Add the butter, brown sugar, and water (plus vanilla if using) to a high heat microwave safe dish – do not stir

- Microwave on high for 6 minutes, or until the center boils (fully bubbled) for about 3-4 minutes total (it should also turn a golden brown and have a nutty scent). If you have a candy thermometer, check that it’s between 300°F – 310°F. If additional time is needed add in 30-second increments to prevent burning
- Use oven mitts (it’s hot) to remove the bowl and pour the molten sugar mixture over the saltines. Use an offset or rubber spatula to smooth it out before it starts to harden to make sure the crackers are evenly coated (it happens quickly, I usually miss some spots)

- Add the candy melts over the toffee layer immediately after spreading (you want it to be warm to hot still). Let them sit for a minute or two so they begin to melt, then spread them evenly with a spatula

- Top with decorations (sprinkles, candy corn, etc) while the melted chocolate layer is still wet (push larger candies like candy corn in slightly so they adhere)

- Refrigerate for 30 minutes, or until hard, then break into pieces using your hands, a mallet, or similar
- Store in an airtight container – enjoy!

- My times are based on a 1000W microwave. If you have a different wattage, your cook times may be slightly more or less as applicable, so adjust as needed for your setup. Humidity and temperature can also affect cooking time – if your toffee doesn’t get hot enough, it won’t set to a “hard crack” but more of a soft caramel (still delicious though)
- The refrigerator is a must here – don’t be tempted to stick your cracker candy in the freezer, as this will cause it to separate!
- Kids can help by adding sprinkles and other decorations after the chocolate is melted. However, the making and pouring of the toffee should be done by an adult since it’s very hot!
