Ingredients List

- 6 cups Rice Krispies cereal (or generic equivalent)
- ¼ cup salted butter (4 Tbsp)
- 10 ounces mini marshmallows
- 12-15 drops neon green food coloring
- Black cookie icing (for hair)
- 20 large candy eyeballs
- 1 cup black candy melts (for the mouth and scar detail)
- 10 Tootsie Rolls, unwrapped and cut in half crosswise
Ingredient Tips or Substitutions
- I think mini marshmallows melt best, but you can use around 40 standard-sized marshmallows instead. For a more gooey texture, increase to 16 ounces of marshmallows
- Instead of the black cookie icing for the hair, you could also use additional black candy melts, or add some chocolate sprinkles (jimmies) instead
- If you don’t have black candy melts, try decorating gel, icing, or dark or semisweet chocolate chips as an alternative
- The Tootsie Rolls create the “bolts” on Frankenstein’s neck. You can also use extra mini marshmallows or pretzel rods cut into small pieces for this
- You can use smaller candy eyeballs if you like, but the larger ones I think work better in this case proportionally with the rest of the treat (you could also cut smaller treats)
Step By Step Instructions
- Grease a 13×9 baking dish with nonstick spray or butter (you could also use parchment)
- Add your butter to a large microwave safe bowl. Heat on high until it melts (about 30 seconds in my 1000W microwave). Then, add the mini marshmallows and stir to coat in butter. Continue cooking in 30-second increments, stirring each time, until melted and smooth (about 1 – 1 ½ minutes)

- Stir in the food coloring until desired shade is reached (I use 14 drops here, but it can vary between brands and amount of marshmallows used, so adjust as needed)

- Pour in the cereal and stir (use a spoon or spatula) until the cereal is well coated in the marshmallow mixture, then press the mixture evenly into an even layer in your greased baking dish (either grease your hands or your spatula with nonstick spray to make this easier)

- Cool in the refrigerator for about 30 minutes, until they firm up. Then, remove from the baking dish, place on a cutting board, and trim the edges. Cut the Rice Krispie treat lengthwise down the center (to give you two long rectangles), then cut each of those rectangles crosswise to create 5 pieces (for a total of 10 pieces between the two lengths)

- Add the “hair” to your monsters using black cookie icing (a wavy bottom edge makes for a fun look). If you prefer to use chocolate for this instead, skip to the next step

- To another microwave safe bowl, add your black candy melts. Melt per package directions (mine calls for 50% power for 1 minute, then additional 30-second intervals until smooth, but it can vary between brands). Add the melted chocolate to a candy piping bag or Ziploc and nip the corner
- Pipe on two dots of chocolate just under the hairline and use this to attach the candy eyes. Pipe dots onto the sides near the “neck” and attach a half Tootsie Roll to each side to form the bolts. Then, draw on a mouth and scar (optional) to finish the decorations

- Refrigerate for another 15 minutes or so to let the decorations harden. Enjoy!

Recipe FAQs
How Do You Make Rice Crispy Treats With Marshmallows?
The classic method is simple: melt butter and marshmallows together until smooth, then stir in Rice Krispies cereal until evenly coated. Press the mixture into a greased pan, let it cool, and cut into squares or shapes.
For Frankenstein treats (or other themed options), you can add food coloring to the marshmallow mixture before stirring in the cereal, then decorate with candy melts, candy eyes, sprinkles, or chocolate details to bring them to life.
Can I Make This Recipe Gluten Free?
Yes! While Rice Krispies cereal traditionally contains malt flavoring (which comes from barley and is not gluten free), there are certified gluten-free rice cereals available.
Look for brands specifically labeled gluten free, and double-check that your marshmallows and decorations are safe as well. With those swaps, you’ll have a delicious gluten-free version of Frankenstein Rice Krispie treats.
Can You Make Rice Krispie Treats With Vegan Marshmallows?
Absolutely. Vegan marshmallows melt just like traditional ones, though they may take a little longer to break down. Use a plant-based butter substitute to replace the dairy butter, make sure your other ingredients are marked vegan, and you’ll have fully vegan Rice Krispie treats.
This swap works perfectly for themed recipes like Frankenstein treats, so everyone can enjoy them regardless of dietary needs!
Tips For the Best Frankenstein Rice Krispie Treats
- Use Fresh Marshmallows: Older marshmallows can make the mixture dry and less gooey. Fresh ones will melt smoother and give you that perfectly chewy texture!
- Don’t Overpack: When pressing the mixture into the pan, use a buttered spatula or wax paper and press lightly. Packing too firmly makes the bars dense instead of chewy
- Bright, Even Color: Add the green food coloring after the marshmallows are melted and stir well before mixing in the cereal, so the color distributes evenly
- Neat Cuts: Let the treats cool completely before cutting into rectangles. A sharp knife lightly greased with butter or sprayed with cooking spray helps make clean cuts!
- Involve the Kids: Kids can add icing, sprinkles and other decorative touches to help. A little creativity makes them extra fun and party-ready!

Storage and Presentation
Storage Tips
- Room Temperature: Store the treats in an airtight container at room temperature for up to 3 days. Layer them with wax or parchment paper to prevent sticking
- Refrigeration: While not necessary, you can refrigerate them if you live in a warm or humid climate. Just note they may become a bit harder, so allow them to sit at room temp for a few minutes before serving
- Freezing: For longer storage, wrap individual treats tightly in plastic wrap, place them in a freezer-safe bag, and freeze for up to 6 weeks. Thaw at room temperature before serving
Serving Tips
- Platter Presentation: Arrange the Frankenstein treats on a black or Halloween-themed platter for a spooky centerpiece
- Individual Wrapping: Wrap each treat in clear cellophane with a fun ribbon or Halloween tie for party favors or trick-or-treat alternatives
- Add Sticks: Skewer the base of each treat with a popsicle stick or similar, then arrange the treats in a jar or in a foam block so they stand upright, for grab and go snacking!
- Pumpkin Chocolate Covered Cherries
