- You can use any small potatoes you like. The baby gold potatoes at my store are often very small, which can be tedious to work with, so I opt for the smallest “normal” gold potatoes I can find
- This recipe is super customizable with different additions to your fillings, depending what you like in your deviled eggs or potato salad. My other favorite additions are 1 Tbsp apple cider vinegar for some tang, or ¼ cup dill pickle or sweet relish. You could also make them “loaded” style like a baked potato with sour cream and bacon! Garlic powder and onion powder are other great seasoning options as well
- Feel free to scale up or down as needed based on the size and number of potatoes you’re making. You can always add extra seasonings and mayo if it looks too dry

- Wash and dry your potatoes (since you’ll eat the skins). Toss them with the olive oil, plus salt and pepper to taste (I do about ¼ tsp of each). Then, place them into your air fryer’s basket or rack in a single layer

- Air fry at 400°F for about 15-20 minutes (times can vary based on different potato sizes, so adjust as needed – my larger ones took 25-30 minutes in total) until fork tender
- Cool until you can handle the potatoes, then slice in half lengthwise. Use a spoon, melon baller, or measuring spoon to scoop out the potato flesh into a bowl. You can do the entire potato half, or just a “yolk” sized divot, but make sure to leave about an ⅛” border around the outside of the potato for stability. I recommend also trimming a tiny slice off the bottom of each side so they sit flat

- Mash the scooped out potato until smooth (use a fork, potato masher, or food processor if you want it really smooth), and then mix in the mayo, mustard, and seasonings, stirring until well combined. You can taste and adjust seasonings as desired here

- Spoon or pipe the potato mixture back into the potato cavity. Top with extra paprika if you like, and garnish with fresh herbs (dill, parsley, or chives). Enjoy!
