It’s no secret I love Trader Joe’s snacks, and their butter toffee pretzels are no exception! However, they’re only available seasonally and the store is kind of far away, so that just gave me an excuse to develop my own simple no bake version to enjoy any time!

- 16 ounce bag mini pretzel twists
- 1 cup brown sugar
- ½ cup salted butter (8 Tbsp; 1 stick)
- ¼ cup light corn syrup
- 1 tsp vanilla extract
- 1 cup toffee bits (such as Heath Bits o Brickle)
Ingredient Tips and Substitutions
- You can absolutely use gluten-free pretzels too
- I highly recommend salted butter for the overall flavor. If you use unsalted that’s fine, but still add a pinch of salt to compensate
- The corn syrup is not expressly necessary, but it helps to keep the toffee from crystalizing after cooling (you can use an equal amount of water instead if you don’t want to use it)
- You can add ½ tsp baking soda to the mix at the end for an airier toffee, but I find it hardens faster and is more difficult to work with, so I choose not to use it
- Instead of toffee bits you could also use chopped nuts to make a tasty variation!
Equipment Note
You’ll need a microwave-safe dish that can handle boiling sugar (300°F). I’ve melted plastic bowls this way, so I choose to use a microwave and oven-safe casserole dish now. Make sure to check your manufacturer guidelines for your specific dish!
Step By Step Instructions
- Line a large baking sheet with parchment paper (if you have two, even better). Add your pretzels to a large (preferably microwave safe) mixing bowl and set aside

- To your high heat safe microwave dish (needs to withstand at least 300°F), add the butter, brown sugar, vanilla, and corn syrup (do not stir)

- Microwave on high for 6 minutes, or until the center reaches a boil (fully bubbled) for about 3-4 minutes total (it should also turn a golden brown and have a nutty scent). If you have a kitchen or candy thermometer, check that it’s between 300°F – 310°F. If additional time is needed add in 30-second increments to prevent burning
- Use oven mitts (it will be very hot) to remove the dish from the microwave, and immediately pour the hot toffee mixture over the pretzels. Add in half the toffee bits, then work quickly (it will start to set immediately) and gently stir until the pretzels are coated. The toffee will probably set up before all the pretzels are coated anyway. Assuming that your mixing bowl is microwave safe as suggested, heat on high for 1 minute, stir, and repeat in 1-minute intervals until everything is well coated – usually takes me no more than 2 minutes to get it nicely spread out. Then, spread the pretzels out onto your prepared baking sheet in as close to a single layer as you can get them, sprinkling the remaining toffee bits evenly over the top

- Allow to cool and fully harden (I pop them in the fridge for about 30 minutes – do not freeze them) then break apart (I use my hands) and enjoy!

- No thermometer? You can check for doneness by dipping a spoon or skewer in the hot toffee. Then, run it under a little cold water. If it hardens, it’s done. If it stays soft, it’s not hot enough yet!
- Humidity is a big factor in making toffee and other candies. You may need to adjust cooking and setting times based on how humid it is in your area. In addition, I use 1000W microwave, so cooking times can vary if you have a different wattage

- Storing: Keep your butter toffee pretzels in an airtight container at room temperature for up to a week. If your kitchen runs warm, you can refrigerate them; just bring them back to room temp before serving so they stay crunchy instead of chewy
