Ingredients List

ingredients to make brain rice krispie treats
  • 5 cups Rice Krispies cereal (or generic equivalent)
  • 10 ounce bag mini marshmallows
  • 3 Tbsp butter (salted preferably)
  • Red or pink food coloring
  • Red gel icing

Ingredient Tips and Substitutions

  • I use slightly less cereal than a traditional Rice Krispie treat blend on purpose, as I think it helps them to shape better
  • If you can find pink marshmallows, then you can skip (or reduce) the food coloring
  • The amount of food coloring needed varies a lot by brand. Start with 5 drops and then keep adding more until you like the color
  • Instead of the red gel icing, you could also use a small brush to paint a little extra red food coloring on top to look like “blood”

Step By Step Instructions

  1. Line a baking sheet (or similar) with parchment paper or spray with nonstick spray
  2. Add the butter to a large microwave safe bowl. Melt butter on high power (about 30 seconds for me in a 1000W microwave). Then, add the mini marshmallows and stir to coat in butter. Continue cooking in 30-second increments, stirring each time, until the mixture is melted and smooth (takes me about 1 – 1 ½ minutes total usually)

  1. Drop in the food coloring and stir until well mixed (no streaks) and desired shade is reached. Mine is McCormick neon pink and I use 5 drops here, but this can vary by brand. Fold in the Rice Krispies cereal until it’s evenly coated in the marshmallow mixture

  1. Use a â…“ cup sized measuring cup (or whatever size you prefer) sprayed with nonstick spray and scoop up a portion of the Rice Krispie mixture. Drop it onto the lined baking sheet, and use your hands (also spray with nonstick spray) to mound it into a slightly oblong circle (I like to make a ball and then just kind of flatten it a bit)
scoop and mold rice krispie mixture into general brain shape
  1. Take the blunt side of a butter knife (sprayed with nonstick spray too) and press it lengthwise into the top to make an indent for the “brain” shape. You may need to gently re-press the sides together to reshape them

  1. Repeat until all brains are formed, then allow them to cool and firm (about 20-30 minutes). Use the red gel icing to add drips of “blood” on the treats, and enjoy!

Recipe FAQs

Can I Make These On The Stove Instead?

Absolutely! Rice Krispie treats are traditionally made on the stovetop, so it’s an easy alternative. Melt the butter and marshmallows together over low heat, then add color and stir in the cereal before shaping the treats.

What’s The Best Way To Shape The Treats?

Grease your hands with butter or nonstick spray and gently shape the mixture while it’s still warm. For defined brain details, use your fingers or a small butter knife to create the center groove.

Can I Use A Mold To Make A Giant Brain?

Yes! A brain-shaped silicone mold is a great way to make a giant Rice Krispie brain. Lightly grease the mold first, press the mixture in firmly enough to hold its shape, then let it set completely before carefully removing it.

Tips For the Best Brain Rice Krispie Treats

  • Make sure to grease everything well for best results! Rice Krispie treats need to be formed while warm, which makes them super sticky! Your hands, all utensils, and pan should all be sprayed with nonstick spray to be easier to work with
  • You’ll want to work fairly quickly so as to get them all formed and pressed with the knife. The longer they sit, the more they’ll harden up which can make it more difficult

Storage and Serving

Storage Tips

  • Store at room temperature in an airtight container for up to 3 days to keep the treats soft and chewy
  • Place parchment or wax paper between layers if stacking to prevent them from sticking together
  • Keep them somewhere cool and dry. Heat and humidity can make the marshmallow mixture sticky
  • Avoid refrigerating if possible. The fridge can make Rice Krispie treats firm and less chewy (but if you do refrigerate them, set out for 10-15 minutes before eating to soften
  • Wrap individually in clear treat bags for easy party favors or grab-and-go treats!

Serving Tips

  • Create a creepy platter. Arrange the brains with gummy worms, candy eyeballs, crushed chocolate cookies, or red berry sauce for a spooky presentation!
  • Smaller brains are easier to serve at parties and work especially well in treat bags
  • Use a giant brain as a centerpiece. If you’re making a molded version, place it in the center of your Halloween dessert table and surround it with smaller treats

Make Ahead

Make the treats the day before your Halloween party for the best combination of convenience and freshness. Keep them tightly covered at room temperature and add decorating gel shortly before serving.

Final Thoughts

Rice Krispies brains are such a fun Halloween treat that brings a little fake gore to a crowd-pleasing snack. I love that you can make them ahead, and they’re easy to portion into small bags or to place on a platter, so they look great on your dessert table!

No bake recipes are always a hit in my house, since they come together quickly without the need for turning on the oven or standing over a stove. If you’re throwing a zombie themed party, scary movie night, or just your next Halloween party, give these brain Rice Krispies a try!
