What Are Air Fryer Sausage Rolls?
Air fryer sausage rolls are a popular snack or appetizer consisting of seasoned sausage meat encased in puff pastry, which is then cooked in an air fryer. With just 3 ingredients and minimal work involved, they’re one of my favorite snacks to make for watching the game too!
The air fryer method provides a quick and efficient way to achieve a crispy and golden pastry exterior while ensuring the sausage filling is thoroughly cooked and juicy.
Sausage rolls are versatile and can be customized with different seasonings or types of sausage to suit personal tastes. They are often served at parties, picnics, or as a savory snack. They even freeze well, if you’d like to prep them ahead of time and cook them later!

You can enjoy puff pastry sausage rolls as a whole pocket sandwich, or cut the rolls into mini bite-sized pieces. Either way, they’re delicious! Plus, you can add other seasonings or sauces for variations to please your whole crew.

Air Fryer Sausage Rolls Ingredients

- 13 Ounce package puff pastry dough, such as Jus Rol (defrosted if frozen)
- ½ Pound pork sausage (bulk or links)
- 1 Large egg, whisked
- 1 tsp seasoning for top (optional)
Ingredient Substitutions and Variations
- Either refrigerated or frozen puff pastry is fine. I like the Jus Rol pastry dough which is refrigerated, since it saves time not having to thaw. This recipe easily doubles if you want to use a larger package. You can also substitute pie crust or pizza dough if preferred
- Traditionally, puff pastry sausage rolls are made with thin (hot dog like) link sausage with the casing removed. However, bulk that’s rolled into a log is also fine as it can be tricky to find the links in the US
- I typically use pre-seasoned pork sausages, like sweet Italian sausage for flavor. You could also swap in breakfast sausage for a tasty start to your day!
- If you don’t want pork, substitute in any other sausage, such as chicken apple sausage, vegetarian sausage, or your favorite homemade sausage. They’re all great!
- While not traditional, adding some spicy brown mustard to the puff pastry under the sausage adds a nice variation. Alternatively, you can always serve on the side for dipping!
- Topping variation: Feel free to sprinkle some sesame seeds or everything seasoning on top of the rolls after egg washing (but before cooking) if you like
How to Cook Puff Pastry Sausage Rolls in Air Fryer
- Preheat your air fryer to 400°F (200°C)
- Lay your puff pastry out flat. Rolling it out a bit makes it easier to work with, if you’re able to

- Cut the puff pastry sheet lengthwise into two equal sections

- Split the sausage into two equal portions, then line the center of each puff pastry sheet with an approximately 1” wide strip of sausage

- Fold the pastry dough over top of the sausage, pinching to seal the edges together

- Flip the pastry dough over so the seam is on the bottom, giving it a press so it lays flat

- Using a sharp knife, score the dough about 8 times to create vents

- If desired, cut the rolls into smaller pieces (or to help them fit in your air fryer). I’ve done about 2” pieces to create mini bites, but feel free to leave them as long as you like

- Brush the tops of the pastry with egg wash using a pastry brush. Sprinkle with sesame seeds or everything seasoning here if you want (optional)

- Place the sausage rolls into the preheated air fryer basket in a single layer, allowing air space between them

- Air fry for 10-15 minutes at 400°F (200°C), or until the pastry is browned and the sausage is cooked through and reads at least 160°F
- Serve sausage rolls with your favorite dipping sauce or enjoy them on their own!

- My sausage rolls were perfectly cooked after exactly 10 minutes in a Ninja Dual Zone air fryer with eight 2” rolls in each basket. Other sizes of rolls and different air fryers may vary slightly

- Store leftover sausage rolls in an airtight container or zippered bag in the refrigerator for up to 4 days
- To reheat leftover fully cooked sausage rolls in the air fryer, heat for 5-6 minutes at 350°F. Add 2-3 minutes if your sausage rolls are frozen to account for the colder temperature
