Once cooled, the custard is topped with a layer of sugar that’s caramelized using a kitchen torch or an oven broiler function to create the signature crisp, glass-like topping.

The air fryer is a convenient option for cooking since it heats up faster than the oven, circulates hot air for a move even cook, and is ideal for smaller batches to save energy as well.

Equipment Notes

You’ll need four 7-ounce ramekins for this recipe. If you cannot fit all of them in your air fryer at once with air space between them, you’ll need to cook in batches.

For caramelizing the topping, you’ll still need a kitchen blowtorch. You can also use the broiler on your range oven if you have one, but watch it very closely as it tends to burn quickly and easily.

While it would be great if the air fryer could do it, you can’t watch it closely enough, it doesn’t get the sugar as caramelized, and it will overcook the custard in the process, which is why you still need a torch or broiler.

How to Make Creme Brulee in the Air Fryer

  1. Heat your heavy cream until it is hot but not boiling. I usually microwave it for 2 minutes on high, stirring halfway through
  2. In a mixing bowl, combine the egg yolks, sugar, and vanilla, stirring until smooth

  1. Cook at 275°F (if your “air fry” setting doesn’t go this low, check other options such as bake or reheat – my Ninja has 270°F on reheat) for 20-25 minutes, until the edges are set and the center is slightly jiggly
  2. Remove to a wire rack to cool. Once cooled, transfer to the refrigerator for at least 2 hours (overnight is fine)

  1. When ready to serve, let the custard come to room temperature. Then, sprinkle ½ Tbsp granulated sugar over top of each ramekin, shaking the dish to spread it into an even thin layer of sugar
  2. Use a kitchen torch to heat it until it caramelizes (make sure to move the torch back and forth so you get even caramelization)

Alternate Oven Baking Directions

  1. Preheat your oven to 285°F
  2. Place the filled ramekins into a deep baking dish (like a 13×9 baking pan) with space between them
  3. Add hot water to the dish, filling until it’s about halfway up the side of the ramekins
  4. Bake for 30-35 minutes, until the edges are set and the middle is slightly jiggly
