Honestly, most of the reason I even watch the Super Bowl is the food! These air fryer buffalo chicken bombs are one of my favorite game day snacks. Flaky biscuits are loaded with buffalo chicken dip filling and cooked up brown and delicious in no time at all. You can’t go wrong!

What Are Buffalo Chicken Bombs?
Buffalo chicken biscuit bombs are a delicious and savory appetizer or snack that combines the bold flavors of buffalo chicken with the buttery goodness of biscuits in a handheld, easy to eat format.
These “bombs” are made by filling biscuit dough with a mixture of shredded chicken, buffalo wing sauce, and a mixture of cream cheese, cheddar cheese, and ranch for added creaminess and tang.
The filled biscuits are sealed, and then baked or air fried until golden brown. I always use my air fryer because it’s faster and just as good (plus it leaves the oven open for other larger things if needed)!

Buffalo chicken bombs are perfect for parties, game day, the Super Bowl, or just general entertaining. You can serve them with dipping sauces like ranch or blue cheese dressing to make them next level!

Ingredients Needed

- 2 cups cooked chicken (shredded or diced, drained if canned)
- ¼ cup buffalo wing sauce
- 1 Tbsp ranch seasoning or dressing
- 4 ounces garlic and herb cream cheese, softened
- ½ cup shredded sharp cheddar cheese
- 8 count Grands buttermilk biscuits
Ingredient Tips and Substitutions
- I use drained, canned chicken for this recipe. However, any leftover cooked chicken or a rotisserie chicken is great too!
- Feel free to use regular cream cheese and add ½ tsp garlic powder plus herbs or seasonings to your liking
- The cheddar can be swapped for mozzarella cheese, provolone, Monterey or pepper jack, or anything else you like
- I find that the best biscuits are not the “flaky layers” variety. You want the regular ones so they don’t fall apart. You can use other flavors besides buttermilk as well (I just like the combo). Feel free to sub crescent or pizza dough instead!
- Optional additions can include some cooked, crumbled bacon, blue cheese crumbles, or some extra hot sauce to add spice!
- Toppings are optional, but you can brush with melted butter and add some fresh parsley or dill, add a drizzle of buffalo sauce and/or ranch, or add some green onions!
Step By Step Instructions
- In a large bowl, combine the chicken, buffalo sauce, ranch, garlic powder, cream cheese, and cheddar cheese, stirring until well mixed

- Open the can of biscuits and separate them over a clean work surface. Flatten each one using the palm of your hand or a rolling pin until they’re about ¼” thick

- Add 2 mounded tablespoons of the chicken mixture to the center of each biscuit (you may have a small amount of filling left over). If you have a cookie scoop, it works well for this

- Bring up the sides of the dough and pinch the seams together well, as you form it into a ball, sealing the chicken mixture inside

- Place the prepared biscuit bombs into your air fryer’s basket or rack in a single layer, seam side down, with air space between them. You can use perforated parchment underneath for easier cleanup, or feel free to spray the basket with nonstick spray

- Cook on the air fry setting at 350°F for 10-12 minutes, flipping halfway, until the dough is golden brown on all sides. Time can vary slightly between air fryers and brands of dough used, so adjust as needed
- Cool slightly before serving (the filling will be hot)! Top with melted butter and herbs, extra sauces, or a sprinkle of sliced green onions if desired (optional). Enjoy!

Alternate Oven Baking Directions
- Preheat your oven to 375°F
- Place biscuit bombs on a baking sheet lined with parchment paper, with space in between each one
- Bake for 15-20 minutes, until golden brown and cooked through
Recipe FAQs
Can I Make Buffalo Chicken Bombs With Crescent Dough?
Yes, crescent dough is a great alternative to biscuit dough for making buffalo chicken bombs. It has a light, flaky texture that works well to encase the filling.
Simply roll out the crescent dough, place the filling in the center, and seal the edges securely before baking or air frying.
What Kind Of Chicken Should I Use?
You can use cooked and shredded chicken breast, rotisserie chicken, or even leftover chicken from a previous meal.
For convenience, canned chicken also works, though freshly cooked or rotisserie chicken often provides better texture and flavor.
Can I Make These Ahead Of Time?
Yes, buffalo chicken biscuit bombs can be prepared in advance. Assemble them fully and store them covered in the refrigerator for up to 24 hours before baking.
Alternatively, you can freeze the unbaked bombs and cook them directly from frozen, adjusting the cooking time accordingly (usually 2-3 minutes extra).
What Are Some Good Alternative Options For Different Dietary Restrictions?
For a gluten free option, use gluten free biscuit or crescent dough. To make them dairy-free, substitute vegan cream cheese and shredded cheese, and use a dairy-free ranch mix (or make your own).
For a vegetarian twist, swap the chicken with a plant-based protein like jackfruit or chickpeas. As always, make sure to check other ingredients to make sure they meet your needs as well.
Tips For Making the Best Buffalo Chicken Bombs
- I do not preheat my Ninja air fryer for this recipe, and 12 minutes is perfect for me. Times can vary between air fryers, so adjust if needed by adding time in small increments
- The most important step for making biscuit bombs is sealing the dough. Make sure the edges are clean, pinch the dough well around the filling, and roll it securely. You may get some leaking still, but this should help minimize it

Storage and Reheating Tips
- Store leftover buffalo chicken bombs in an airtight container in the refrigerator for 3-4 days
- Reheat leftovers in an air fryer or oven at 350°F (175°C) for 5–7 minutes (4-5 in the air fryer) until warm and crispy. Avoid microwaving, as it can make the dough soggy. If reheating from frozen, increase the cooking time slightly to ensure the filling is heated through (usually 2-3 minutes more)
